View Full Version : Need help: my flax crackers are soggy no matter how long I dehydrate

Can you help me out here? When I made my flax crackers the first time (Alissa's plain flax seed crackers), it turned out nice and crunchy. But in the last 4 or 5 times, they always come out soggy, even after dehydrating it for 30 hours. I don't know why.

mmm, are you soaking flaxseeds? What tempeture are you dehydrating on? Are you make thick or thin crackers? Do you flip?

I don't soak flaxseeds because I grind them.
I dehydrate at 105-110 F
I make very very thin crackers.
I flip.

well I can't help, sorry. I always soak mine and dehydrate between 95 and 100 and put in very thin. They turn out perfectly crispy, yum!
I am sure somebody will be along who has expereince with grinding.

I soak my flax seeds- equal parts water and flax- for 30 minutes to a few hours. Then I add whatever spices I want and spread them out thin on the teflex and they always get crunchy.

You're not alone. Mine dont always turn out totally crunchy either and I was planning to start a thread about it.
I also dehydrated some eggplant strips and for about 20 hours and they never got totally crunchy. Kind of chewy...
yes, they are thin and I do soak them...
hmm
any ideas?

I lightly put a tiny bit of oil on the dehydrator sheet before I spread the stuff. Halfway through, when it is dry on top but soggy on the bottom, I flip it. I do this with everything I dehydrate, and come out with good results. Try a small batch and see if this might help??

When I flip mine, I flip them onto the mesh screen, not the texflex. Are you flipping onto a screen? I hate it when stuff doesn't come out right!!

Do you guys think it's the oil? The first time when I made it, I added oil, and it was crunchy. I didn't use oil in the last couple of times. :confused:

I'm trying to think of my recipe. What ARE you putting in your crackers, maybe that would give us a clue as to why they stay soggy. I always grind my seeds....so that shouldn't do it, at least I wouldn't think so. Anyway....

Thanks Wendi. This is what I do:
Chop the following to very small pieces:
2C Chinese spinach
2C celery
1C soaked sundried tomatoes
5 bell peppers
1 squash
Mix above w/2C grounded flax seeds & Nama shoyu
