Hi Amethyst Rain,
Yes, Macadamias are very tough to crack!!!!
I got a special nutcracker, krakanut,
from Nature's First Law to help open these.
It was around $40 if I remember right. It's not like a regular nutcracker
from the store. The raw fooders that use to run my organic food coop
just used a hammer though. If you plan to eat them regularly
you might consider getting one-less messy. But if not, the hammer
would work. Good Luck getting them open.
Hope that Helps!

As far as I know the krakanut is the only way to get the nut out, without smashing the whole thing to smitherines, with a hammer, like I used to do.
They are expensive, $40 for a gadget, but they work pefectly, easily, and not alot of mess.
And since macs turn rancid almost the minute they are opened, it is always a good idea to open them yourself.
I actually buy mine from a health food store about an hour away, and they crack them there for you. I just buy them by the pound $14, way expensive, but worth it to me, to NOT have to crack them.
I don't use alot of macs although I love them, I only use them for really special occasions.
Once they are cracked open, I put them in the fridge to keep.
They last a long time that way, they are also very heat sensative, so don't keep them on the counter. Always, at least in the fridge.

While we are on the topic of macadamias going rancid;
I wonder how long their shelf life if kept unopened in the shell?
I have a bag that is getting close to a year-Hope their still good.
Rawpriestess is right-they do go rancid quick out of the shell.
When I made Alissa's strawberry crepes recipe (double YUMM!)
I just bought them in the bulk section already deshelled and they didn't taste
as fresh as I would of hoped considering they were soooo very expensive!
