I love them, I've a sure source so they're raw,
must I soak them?
Which nuts & seeds I MUST soak and which not?

Hi Sunny. It's my understanding, from Alissa's book and others, that to "unlock" the enzyme inhibitor in all nuts and seeds, they must be soaked. I think, that so as not to discourage anyone who doesn't prepare them ahead of time, we're told it's okay to eat them unsoaked. I personally don't think it's a big problem to eat some of them unsoaked, but the majority of those you eat should be soaked. Actually, I think that eating as few nuts as possible is best. If you're eating a lot of raw gourmet dishes, though, you're going to be having a lot of nuts.
Hope this answered your question, even though I sort of rambled off a bit. I'm sure lots of other people will weigh in on this.
How great to have a source for pistachios -- I don't think I've ever seen any raw.
