I made a lovely carrot soup yesterday and even my non-raw mom loved it. She was making a cooked carrot soup with yogurt in it. Blah. So I decided to make a raw version.
I juiced 1 lb. of carrots- ( Saved pulp for crackers )
Juice of 1 tart green apple
Toss the juice in a blender and add on avocado.
Add a dash of salt, pepper and cumin.
Blend it up-
It comes out SO thick and delicious- and I don't even care for cold soup too much.
