Hello,

I got several green peppers from my local farm which I know are actually not-quite-ripened red peppers because there are little red splotches on them.

My question: To ripen these suckers do I place them in the fridge, leave them out in a brown paper bag, leave them out on the window sill? Anyone have experience with this. My instinct is to leave them out like fruit, but I'm afraid they'll spoil like that before they've had a chance to ripen.

I leave mine on the window.
They never go rotton but sometimes shrivel up a little if it takes too long. I eat them anyway.

swing, all green peppers are unripe versions of either red, yellow, orange, purple peppers, etc... There aren't any sweet peppers that are ripe when green. the green pepper is just the unripened stage of a sweet pepper.

I don't think they will actually ripen to a red color for you when they're picked early like that, let us know what happens.

Why would the green peppers not be good for someone eating raw?

you see eating raw, isn't just eating raw foods, it is also eating ripe and fresh foods, and hopefully organic,

it doesn't serve our bodies to eat unripened foods, that is why they don't taste good, like apples, or bananas, that are green, ICK, no flavor, actually bitter

when you can smell a fruit it is good to eat, that is it's way of saying "eat me, eat me now." it is beautifully colored, has a wonderful fragrance, and allows you to pick it easily.

I mainly use red, orange, yellow peppers...but on occasion, I will buy a green pepper, chop up and use it in sauce for "spaghetti" or on pizza. I know it's not optimal, but so are a few other things I still use (cashews, oat groats, etc.)

I don't know if it's a mental thing or not, but some recipes just don't seem the same using the red, orange or yellow varieties as opposed to green *shrugs*
