I spoke with a gentleman at the local farmers market and he said that he used to work at a place where they gas the banana's. I said "No way? ". But today I found this link:
http://www.jfc.ru/english/bonanza/gaz.php
the 5% gas is called ethylene = http://en.wikipedia.org/wiki/Ethylene
I guess the gassing is better than the GM approach:

Why can't we respect what God has made and let it live naturally?
I think that sounds scarier than it is. The idea is to keep fruits in low oxygen environments, in order to slow down ripening. So, bananas and other fruits and veggies are shipped and stored this way so that they will arrive at their destination still edible -- otherwise, they'd be rotten by the time they arrive. Sure, we'd all rather eat them fresh off the tree, but since bananas don't grow where I live, I'll accept the, IMO, minor compromise of fruit being shipped in low oxygen environments. But obviously, fruit that is stored in this fashion is much older that fruits grown locally.

Does anyone know if they gas organic bananas.
Reading the above link it seems likely that they do.

Well, they aren't adding any artificial gases to them at least. They just want them to ripen evenly.

Thanks for the heads up Path !!!!!!!!!
I just bought some organic bananas for my sister and haven't come across gassing organic ones after googling.....so far.
I may be wrong, but I think they pretty much gas most fruit organic or not if it comes from far away.
The gas apparently is naturally present in the fruit and is one of the things that causes fruit to ripen.
Because a lot of fruit is picked very 'green' in order to be able to transport it, they use the gas once it arrives at its destination to start the ripening process.
One of the reasons so many people now encourage others to eat locally grown produce for which there is no need to gas.

<<Using a procedure called 'antisense', the researchers report that they have inverted the ripening gene, which slows the ripening process down. >>
Hmmm... seems to me this whole GM thing is "anti-sense"

Well according to Juliano, God didn't create bananas and Juliano won't serve them at his restaurant. He says that they're a highly hybridized fruit and that the fruit they came from had big seeds in them and are basically inedible.
you can check out what he says for yourself at http://www.planetraw.com/raw-food-menu.php
also this woman agrees

This guy disagrees however so take it for what it's worth

There are not supposed to gas Organic foods, though I can imagine it happens.
Though I disagree with it, it is not Natural, I think if you do not eat the peel you are fine. The banana does not absorb it thru the skin.
Banana's are on of the fruits that are low on the pesticide list, grapefruits too. Due to the peel.

* chuckles *
this is the reason why I personally lean towards Wolfe and Cousens on avoiding hybrid fruitss as much as possible. I don't like how I feel after eating a banana. On the other hand, my sister can eat one and feel great!

I've seen banana seeds. They're about 15 mm diameter by 10 mm thick with a big hole in one side. The seedless banana is triploid, so it can't grow seeds, and most likely belongs to the variety called Cavendish, which is in some danger. Not much is left of the original banana stock in Africa. Hopefully banana growers will get some inspiration from the sapient muse ;)

Nitrogen is the principal component of plain old air (78%) and ethylene is produced by ripening fruits anyway.
The sad part is that just about all the produce that we eat has been tampered with - not genetically engineered, but genetically manipulated through hybridization, cross-breeding, cross-polination etc.
Every so often some stores will have 'wild' fruit for sale - usually wild berries of some kind.
The rest of the stuff we eat is not really like that which was eaten 100 years ago.
Unfortunately, humans think they can improve on nature. Nature has only been at it for millions of years, but humans, in their arrogance, have been at it for a few hundred.
The whole thing is backwards.

I always find it very interesting what "they",( the food growers/fda/scientists/etc..), do to our food and never really tell you the consumer what's going on. So you /the consumer must always do your due diligence on everything, to determine if it's okay to consume
Just recently there was a article on the news,(not sure where it's at? maybe some of you know?), but it's a prime example of lack of information. Europe refused rice from the united states because it was GM rice. And I read another where Zambia did the same as well because the corn some 50,000 bushels were all GM corn/maize. Just makes you wander some times. I think that misslinda, put out an post about which fruits are GM, and how to tell the differance. I'll have to go and try and find it. :D

I just heard another weird one on a radio report today.
The guy being interviewed was from the Government Agriculture Agency and he was talking about the work that they were doing at their research centre.
He said "You know the way everybody wants to eat healthier diets and all the stuff on the shelvs has added omega3 so we are researching feeding the cattle different grasses and fish..........."
I said to myself "how stupid is that".
If people want omega3 then why can they not eat foods that are naturally rich in omega3. How Frankenstein is it to feed fish to cattle in the hope that people will get a little more omega3.
I am still in a state of shock.

I knew there was a reason I never liked bananas.
