i have tons of limes, no lemons!!

Shoot! I'd say go for it. If nothing else, you'll have created a new recipe. And if the chews don't workout, you probably could use that as a base for a pie or something...
Of course, you can't call 'em LEMON chews if it does work... ;)

Yes, it would be good. Do the same, just use limes. You'll have nice chewy lime cookies.
Try half a batch with some cayenne to give it a nice little kick.

If you have any lavendar - add that! I made a very similar cookie to the lemon chew recipe from Sharon awhile back, which had lime zest and juice, and crumbled lavendar flowers (fresh and dried), with the same cashew 'flour' and coconut paste type base.
SOOOOO good! Every non-raw'er I tested them on loved them. Dehydrated or not :)
(I'm also biased towards limes, I love 'em!)

If you have any lavendar - add that! I made a very similar cookie to the lemon chew recipe from Sharon awhile back, which had lime zest and juice, and crumbled lavendar flowers (fresh and dried), with the same cashew 'flour' and coconut paste type base.

Sure, here it is:
Tart Crust`- FOR KEY LIME COOKIES
1⁄2 pound raw macadamia nuts (I USE CASHEWS - 2 CUPS)
1 cup shredded, unsweetened dry coconut
1 tablespoon grated lime zest
2 tablespoons lime juice
1⁄2 vanilla bean, seeds only, or 2 tsp. vanilla extract (I USE EXTRACT, JUST ABOUT 1/2 TSP)
1 teaspoon salt (I USE ABOUT 1/4 TSP)
4 packets Stevia (an all-natural artificial sweetener, available at health-food stores)
2 tablespoons agave nectar (available at health-food stores)
Cold-pressed coconut butter (also known as coconut oil; available at Garden of Life), or macadamia-nut oil (I OMIT)
I grind the cashews to a fine powder, but avoid processing to the point they become oily. I them mix everything together in a food processor, tasting to adjust salt, vanilla, etc.
I then roll into balls, flatten to make cookie shapes and dehydrate until they are dry on the outside but chewy on the inside. Yum!

sptygl, I just want to note that I adjust the amount of salt, vanilla and sweetener to my liking, so I suggest you do as well, as you may not like my adjustments. You may prefer the recipe as written in fact, although I really do think there is too much salt. Anyway, I hope you enjoy it as much we do!

made the lemon chewies with a mixture of macadamia nuts and walnuts
the lemon chewies needed a bit more, which of course i didn't realize till they were DONE!
the lime version, came out nice, but again needed some more to it, i had added lavender, which added a nice touch...........but it too could have used a bit more, like couple dates and some more honey!
i also made the lime tarts/cookie recipe......... again nice, but i might add some addtional dates and honey!!
it might be missing just something else, not sure...........
they are on the counter at the moment, ready to be eaten!!!
oh and i also made, YUM...........
macadamia nut-dates--honey ----rolled into coconut............
and WOW this was good, they are not quite ready yet
they are in the freezer setting
but wow, they were yummy, LICKED THE WHOLE BOWL!! :p

I have the lime chews in the dehydrator. I used far less agave because I don't like things that are sweet. About maybe 1 T. They are delish! Reminds me of the cherry limeades I had as a child. And although it's the wrong season for cherries, I'm thinking these might be a good addition, not processed in perhaps, but maybe a few cherries chopped finely and stirred in, in lieu of sweetener. Of course you'd want sweet cherries for this. Will have to remember this next year when my Bings are ripe!

mine came out horrible, i was being nice in the post that they just needed a little something!!
my neighbors tried them and didn't like them either............
but i like your suggestions........sounds like it might just do the trick!!

I know this post is about the chews, but since you have so many limes ripening, why not juice them, and freeze the juice in ice trays? I do this with lemon sometimes. Or you can make a huge container of lime-aid with just a but of agave nectar added to sweeten it. It's one of my favorites.
I know the feeling of having a bunch of something on hand, and not knowing what to do with it all. I hope this helps a little.
