Ok, I made this yesterday and I am proud to say that it was the best dessert that I have ever made. Try it when trying to impress a skeptical SAD friend. Now, the sauce has maple sryp in it, so you can either delete the caramel sauce, or I would make it for a SAD person, or a special occasion.
Macadamia Coconut Torte with Banana Ice Cream and Caramel Sauce
Torte
2 cups macadamia nuts
1 cup dry, shredded coconut
2 tsp vanilla
1 tsp sea salt
dash of stevia
3 tablespoons agave nectar
Caramel Sauce
6 tablespoons almond or cashew butter
2 TBL coconut butter
1/2 cup maple sryup
1 TBL vanilla
3 pitted dates
1/4 tsp cinnamon
pinch of sea salt
For the tarte
mix all ingredients in a food processor. Just pilse until well blended and still a little chuncky. DO NOT overprocess. Press into 4 tarte pans, or 1 large pie or tarte pan lined with saran wrap and put into freezer until ready to use.
banana ice cream...
I do not have a chamion juicer, so I use my vita-mix with the frozen bananas and it works great.
caramel sauce
all ingredients whirled up in a vita-mix or blender!
Put the ice cream on the tarte and drizzle (or pour, like I do) the caramel on top.. It's divine!
