I made my first prepared meal yesterday - it was the fajitas with the smokey jalapeno cheese from another thread. I ate it for lunch and dinner then for breakfast this morning ALL BY MY SELF!! So I ate 2 cups of cashews and 1/2 cup olive oil in about 24 hours!! OMG!!


THEN. . . I made those Pesto stuffed mushrooms for the first time They were deliciouse!! I made 2 packages of white button mushrooms = about 30 mushrooms my mom had 6 and my dad had 6 and I ate the rest = 28!!

more nuts and olive oil ( I had 1/3 the filling left over that I didn't use) but STILL!!

I think the best thing for me to do is to only make prepared meals 2x a week - so I don't gain weight, and I need to start exercising since I am in a wheelchair I can blimp up quite easy - but I can also exercise quite easy too :rolleyes: so I guess I don't really have an excuse - I don't even work so I have the time too - I guess I just needed to put that out there so I will force myself :D

Question is it usually the rule that you can have nuts OR olives OR oil ?

or can you have all of those in one day? about how much would be a good portion?

I make up the mushrooms and freeze them, then take out 4 at a time for dinner, pop them into the dehydrator to warm and have them with something else, that way I don't get too much of one thing at a time.

Ooo thanks RawPriestess - what a great idea :) I can't believe I didn't think that.

This would help me with my portion control :) and It would also help with not having to make them up everytime I wanted some - I wonder if everything raw is ok to freeze or do some things come out with a funky taste or texture?

My problem is not eating too much but making too much and then often having to throw some out because I'm the only one who will eat it. I eat a lot of salad things that don't freeze so well. I'm finding that rather than making a big salad I seem to do better with little piles of cut up vegetables. That way I can always go back for more without having a leftover mess in a bowl that I can't finish.
