When reading Alissa'a book (the testimony section by Rachel), I noticed she referred to making a mush that tasted just like taco meat. Anyone have the recipe?

I searched this site & found something made from leftover almond pulp, but since I add dates, vanilla & spices before I strain my almond milk, I don't think the base would have the right flavors!

Ideas? Thanks!

Hmm, when I make "taco meat" I pulse up some walnuts, then in a bowl add a bit of olive oil, like barely a drizzle and add seasoning to taste. Put some water in it, just enough to make is very moist and place it in the fridge to let the nuts soak up the water and flavor! I then wrap them in cabbage with some heirloom tomato! Mmm...so good!!

I am bumping this cuz I was gonna post a question about it tonight too. Does any one know what recipe Rachel used. She made it sound really good.

I remember reading about this in Alissa's book too and have always wondered what the "recipe" was! Hopefully someone will know!!

In his lasagna recipe, Russell uses a "walnut meat" recipe. I think it was pretty good! Here's that piece of it, FYI... (maybe just switch up the seasonings so it's less Italian and more Mexican tasting?)

Walnut Meat Layer

1 ½c walnuts soaked 1 hour or more
1c sun-dried tomatoes, soaked for 1 hour or more
2T dark/brown miso
2t dried oregano
2t dried sage
5T nama shoyu
½t cayenne pepper
2T olive oil
1T agave nectar
1t sea salt

that is an amazing sausage. I shaped them and dehydrated them like patties. Awesome!
