So, my dehydrator is in the mail but I have a sweet potato I want to eat so I googled some recipes and these 2 sounded particularily interesting so I thought I would post them... might try one tonight, I'll let you know how it goes.

Raw sweet potato and leek soup

Ingredients:

1 lb sweet potato
1 lb leek
1 avocado
1 tbsp Braggs seasoning
1 small knob ginger (finely chopped)
1/2 white onion
1 vine-ripened tomato
Celtic sea salt and pepper to taste
1 cups charged water
Procedure:


Peel, wash, and chop the sweet potato and leeks.
Place all the ingredients in a blender and blend until the texture is smooth.
Adjust seasoning if necessary.


Raw Sweet Potato Casserole Recipe #151259
Creamy, slightly sweet casserole topped with walnuts. Yes, it's made with raw sweet potato and the texture isn't exactly like your typical sweet potato casserole, but I love it! Tweaked the original recipe from Herbs for Health magazine, which called for dehydrating the nuts. Prep time does not include soaking the nuts overnight.

30 min 30 min prep
1 1/2 cups pecans or walnuts, soaked overnight, then drained (let dry a bit on a paper towel)
4 cups peeled and chopped sweet potatoes
1/2 cup water
1/2 cup dates, soaked for about 20 minutes
1 teaspoon cinnamon
1 teaspoon vanilla (this is not a raw product)
1/2 teaspoon salt
1/4 cup honey

Put potatoes, 1/2 C nuts, dates, cinnamon and vanilla in processor and puree till smooth.
Pour into a casserole dish.
In another bowl, mix the remaining 1 C nuts with salt and honey, and sprinkle over the potato mixture.
I enjoyed this at room tempurature, but still good straight out of the frig.

i was thinking of a way to make candied yams and i dont want them crunchy. can you just soak the yams for a long time to soften them up? i was thinking the same thing for potato salad...can i just soak them?

I like doing a soup with tomato and sweet potato, with fresh coconut cream for richness if you want. A little garlic and lemon is delicious too.

Great thread! I love sweet potatoes... I remember seeing a recipe somewhere that did soak sweet pototoes overnight before using them. It was done to remove some of the starch... then the potatoes (shredded I think) were rinsed before using. I haven't tried that but, am interested if someone else has... and what recipe they made.

SWEET POTATO SALAD: (from a Raw Potluck)
GRATE:
2-3 yams or sweet potatoes
1 C coconut
2-3 apples
1 Tbl to 1/4 C ginger root
*put in large bowl... set aside

*Add in 1 C chopped walnuts (can be soaked and dehydrated if you want)

JUICE (DRESSING)
3 lemons
2 oranges
*juice the lemons and oranges
*can add raw honey or agave to taste
*cinnamon to taste
*whisk dressing... set aside

VARIATIONS: (other things you may want add)
can add pineapple or raisins

*Mix ingredients and toss with dressing... chill and let flavors blend

I just made the sweet potato casserole... I used a white sweet potato cuz that is the kind I like when I eat cooked food and I had it left over, but I think the sweeter orange kind would be better... but it came out really yummy, I added a bit of shredded coconut along with the nuts and had to add a bit of agave nectar since the white sweet potato is more starchy and less sweet..... it is really yummy though! Except for the slightly grainy texture, no one would even think about the fact that this might not be a "traditional" dish if they met it at a potluck... I'm going to bring it to movie night later and feed it to the boyfriend and a few friends and see what they think before I tell them it is raw....

Thanks for the recipes, guys, I'm gonna try some of those!

wow, the boyfriend totally devoured the sweet potato cassorole I made... go raw food!
