Hi All!

I have a question:

I am juice fasting for the next 40 days or so (with Sweet Lips) and I would like to incorperate coconut water into some of my juices. My problem is, I don't want to waste all of that yummy meat. SO, can I freeze it to use when I am done fasting. I wasn't sure how well it would freeze or if it would be any good after being in the freezer for a month! DOes anyone have any experience with this???

rawjojo, I don't have direct experience with it, but many people have told me to dehydrate it. If it is the young coconuts, just scoop the meat right onto the teflex sheets and dehydrate it. I was told it comes out like white chocolate. The older mature coconuts, you can also dehydrate the meat also.

WIll the young meat get dry enough to keep. I afraid it won't completely dry all the way out and then it might mold?!?!?!?

I have been freezing the mature coconut meat since I started raw. Makes it easier: You spend one afternoon chopping nuts, so that when you want some during the week you don't have all the work to "liberate" the meat. Just make sure that you pack it airtight.

Is the mature coconut meat any drier than the young ones? I have never had a mature one!

The mature coconut has drier meat. The younger ones are jelly-ish. Try dehydrating it. It will dry out completely, if left in dehydrator long enough.
