I love chicken salad and just wondering if anyone has a recipe for it. I've looked all over and haven't come across one yet.

Mock Chicken Salad
This is really delicious stuffed in a large tomato or avocado.
Serves 4-6


Ingredients:
1/4 C sunflower seeds
1 C cashews
1 cucumber, peeled and seeded and cut into chunks
2 green onions, cut into smaller pieces
1 cup of pecans
1 celery stick, cut into chunks
1 tsp. dried dill
1/4 tsp. curry powder
juice of 1/2 a lemon

Preparation:
Put all ingredients in a food processor and pulse chop until everything is chopped medium to fine. Enjoy!

This recipe is from The Raw Table. There is a yummy looking picture of it there. I like this a lot, almost too much. :p

I was going to reply with the same recipe. I love this!!! It is too good. My aunt always made a delicious chicken salad with apple and walnut chunks in it. I am going to try this recipe with a few changes to get closer to my aunt's version...although this recipe needs no change as it is delish as is. My planned changes next time around: puree everything in recipe till smooth, add in some chopped walnuts, apple, and extra celery for texture. Will let you know when I try it.

Try the RAWVOLUTION book. The chicken salad and the mayo with it is great. They have it at Barnes and Noble

I made this recipe! Thanks for posting it frozenme. It is great. It's been years since I've tasted chicken (28 or so) so I can't say if it tastes like the real thing or not. It's just a nice mixture of nuts and veggies.
