View Full Version : How do I make PRETTY dehydrated BANANA CHIPS???

I dehydrated bananas and they look so gross. They donÂ’t taste so hot either. I looked on a SAD package of banana chips and the ingredients are Banana, Sugar, Coconut Oil, and Sulfur Dioxide as a preservative. The Sulfur Dioxide is used to maintain the appearance of the fruit rather than prevent rotting, according to Wikipedia (encyclopedia). Well I can use agave nectar instead of sugar and coconut oil but what can I use to make them appear pretty? Please help! :confused:
Also how much agave and oil ratio to banana do you think I should I use? :rolleyes:

The main problem with banana chips is that the store-bought ones are fried, not dehydrated. Thus even without preservatives, they would still look prettier than homemade ones.

lemon juice will stop discoloration
some kind of sweetner, maple, agave, but just a drop on each piece will slow down dehydration, but will add to the taste.
Just some suggestions..
(holding out for more suggestions)

Orange juice is good, too. It makes them sweeter with the citric acid you need to help them not go brown.
I'm experimenting with banana chips myself, but SOMEONE unplugged the dehydrator (this after many instances of the heat being turned up to 145 degrees F grrr!!) so they went brown and... gooey. *sigh*

I know that when we went raw the first time. We tried banana chips and had similar problems they looked not so great and taste was blah.
I went and bought banana chips from wild oats bulk section cause I refused to eat the ones we made. hubby put them together not realizing and after a week or so of munching on them the raw ones were actually better and the only ones left in the container were the others.
The things we learned. Is that the bananas have to be very ripe and you have to learn to ignore the color. The riper the sweeter.

Try slicing the banana lengthwise with an egg slicer.
That way, you'll get long strips that are much easier to deal with than the round chips. My friend, a recently retired school teacher, used to bring these to his students. The kids really liked 'em.
I used to do this quite often but don't mess with it anymore. I much prefer fresh bananas with the water still intact. The dehydrated bananas make me thirsty and don't digest as easily for me.
I'd sell my dehydrator if my wife didn't use it every week for her flax crackers (I introduced her to flax crackers and now she's been hooked.) At least that's a better snack for her than potato chips :)
