I was wondering what the ingredients for that was? Couldn't find it on here.

I noticed she was also talking about a ricotta cheese recipe. Is that in Alissa's book?

Never mind. Didn't realize that recipe was in one of her books. Gonna have to order some of those books sometime soon!

The gooey cheese is in the Italian Feast book-loaded with more great ideas.

The gooey cheese is also in the Dairy Delights book by RP, a great collection of cheeses, milks and other treats.

I have four of her books and I really like the recipes!

Here are a few recipes... maybe they will work for you for now
(from Sprout Raw Food Site)

CHEESE SAUCE FOR PIZZA:
2 C macadamia nuts (soaked 8 hours, drained)
2 C water
1 tsp sea salt
1 tsp tumeric
2 sundried tomatoes
juice of 1 lemon
1 C pine nuts (soaked 8 hours, drained)
*Place macadamia nuts, water, salt, tumeric, sundried tomatoes, lemon juice in blender... Blend smooth
*Add in pine nuts... Blend Smooth

TOMATO PIZZA SAUCE:
3 C sundried tomato halves (soaked 2 hours, drained) (save water)
3 cloves garlic
1/4 C fresh oregano
1/2 C fresh basil
2 dates (seeded and soaked 1 hour, drained)
1 tsp sea salt
1 Tbl Nama Shoyu
1/2 C sundried tomato soak water, if needed
*Blend all ingredients smooth... to make a thick paste... add a little water if needed

PARTY PIZZA CRUST:
2 C sunflower seeds (soaked 8 hours, dehydrated 12 hours)
2 C flaxseeds, whole
1 C flaxseeds, ground
1 C sundried tomatoes (soaked 3 hours, drained) (save water)
2 onions chopped
4 cloves garlic
4 tsp sea salt
1/4 C fresh basil
1/4 C fresh oregano
1/4 C fresh thyme
2 Tbl olive oil
4 C water or amount needed to make dough thick and creamy
INSTRUCTIONS:
1) chop garlic finely in food processor
2) add in basil, oregano and thyme... chopping fine
3) add in sunflower seeds and chop till fine... add flaxseeds and chop till fine... then place mixture in large bowl
4) chop tomatoes and onions in food processor till fine
5) add in olive oil and water and blend smooth
6) pour this in mixing bowl... mix all ingredients well
7) let stand 15 minutes until flaxseeds have had time to absorb the water
8) add in more water if needed to make mixture thick and creamy like oatmeal
9) divide this mixture on teflex sheets... into 1 large pizza crust or 4 small pizzas
10) dehydrate at 95 degrees for 6-8 hours... then turn over to a mesh dehydrator sheet... dehydrate 8 more hours or crust is crisp

I'm sorry, I don't know whose recipe books you guys are talking about. I'm looking for new recipes as my 7 year old is now raw with me and I'm trying new things for him. I'm printing this one off, it sounds delicious!

Special Equipment: food processor
1 cups tahini
1 T lemon juice
1 T olive oil
1 T golden flax meal
1/2 cup water
1 tsp. white onion (minced)
1/2 cup young coconut meat
1/2 tsp. salt
Blend all cheese ingredients in food processor until smooth.

Wow RP that was very generous! I may try this as I get burnt out on the different raw cheeses.

Is it really stringy? I guess that must be from the flax?

You didn't have to do that. I just decided to try alissa's cheddar cheese recipe this time, and do yours after I ordered them. I just wanted to order your books as a group, instead of individually...but gosh now that you have that RFT discount....I might be able to get them sooner! THANK YOU!

Rawpriestess: Would YOUR recipe work as the Paneer (cheese) for Indian Saag Paneer? Seems that there are so many people missing this and can't find a substitute for the Paneer: Jicama? too crunchy even after soaking. Someone mentioned a discount. Didn't see, and if so, does that apply to her books as well? Thanks.

The manicotti just sounds too incredible to be true as one in the Italian book. I'm not one for lots of nuts or heavy stuff, so always trying to prepare dishes with less of the nuts/seeds althought they are great, but not on the "figure."

Are these recipes more gourmet type eating?
