View Full Version : Yummy authentic Thai coconut soup

WOW. I just invented this soup. It is really similar to that Tom Yum Thai coconut soup, and has a really warming and filling quality, I am going to make this tons in the winter (I live near the Canadian border, burrr) Plus, you get all the taste of the original soup, but simplified into some pretty common ingredients without all of the exotic roots. I'm eating it right now.

Ok, I don't really measure when I "cook" so here is roughly what I did and you can adjust for your personal taste.

Put in a blender:

Half a big clove of garlic or one small clove
Approx. 1.5 cups of young coconut water
Approx. 1/2 cup young coconut meat
A small chunk of fresh ginger
grated lime rind
Pinch of chili paste or fresh hot chilis or dried chili flakes
a spoonful of white miso
one large green onion stalk
small chunk of red onion
lime juice
Fresh or dried cilantro
sprinkle of kelp powder (optional-I had some on hand and thought it would substitute well for the 'fish sauce' but I don't know if it really matters for the flavor)

Blend it all together, yum!

I live in Quebec, Montreal (very cold winters here) so I know what you mean.
I don't think I am going to wait till winter though, I have some young coconuts I did not know what to do with so tomorrow i will try your recipe.
The only thing is that I do not have white miso, don't even know what it is like. Is regular miso ok to use?

I'm pretty sure it is fine! I used the miso because the cooked recipe I adapted from called for chicken broth.... I'm not sure what the differences in miso really mean, I think white is just a bit more mild flavored... enjoy the soup! I'm going to make some more tomorrow also to get my boyfriend hooked on it.

PS... I made this by adapting a cooked recipe which called for tamari, so I added a little bit of Braggs... some of you might be tempted to do the same since I know I like to substitute in for salty things ike tamari or salt, but it was gross, I had to add more of everything else to get the good flavor back....
