I have hear that shredded coconut is dried at @ 110 - 125 degrees. Is this problematic? Is there any (other than Alissa's) dried at a lower temperature or is this the norm?

Hmm. You could always buy your own coconut and dry it at your own temperature :) I use 34 degrees celsius. From one coconut, I got the equivalent of one bag of coconut. A lot of work for one bag of coconut, but it's worth it

I personally won't eat anything over 115 and at home I heat most thing at 95 degrees. I dry my coconut at home at 95. Turns out great!

Lay-Lay, could you tell me what kind of coconut you use to dry your own (young Thai or the brown ones)? Do you grate it before you dry it?
