I've been wanting to make a cucumber salad for a while (one that's just made from cucumbers and a dressing), but I can't find any recipes that don't have yogurt in them. So does anyone have any cucumber salad recipes, thet are raw and low fat? I'd really appriciate it if anyone does.

Alissa has a really good one with just cukes and wakame. Can always leave out the wakame methinks.

well I have one but it is not just cucumbers and dressing.

Lay-lays Mango-Cucumber Salad

Mango chunks
cube cucumber
chop some onions

Mix all together and drizzle some lime over it all.
YUMMY!

The other day I came up with this little salad with mint that reminded me a bit of Cucumber Yogurt Salad. My recipe was:

2 hothouse cucumbers - diced
1 package fresh mint (I think it's around 1 oz or so) - chopped fine
the juice of 1 small lime

Throw it all in a bowl and let it sit for at least an hour so the flavors can meld together.

Cucumbers are good with asian dressings: lime or apple cider vinegar, ginger, nama shoyu.

I usually do cucumbers, tomatos, and onions in olive oil, a very small amount of raw tahini (optional), lemon or lime juice, a splash of apple cidar vinegar, a clove of garlic, parsley, basil, and sea salt. Its very refreshing in the summer.

Mine's kinda like Jen's... just made some yesterday, the whole family loves it!

a cucumber
a couple tomatoes
1/4 chopped red onion
several sprinkles of dried dill
a pinch of celtic sea salt
a glug or two of hemp oil
a couple splashes of apple cider vinegar (sorry, I just dump 'em in, it always turns out!)

I love the simple version:

chunky cuke
chunky tomato
finely chopped red onion
Apple Cider Vinegar OR lemon juice
cumin
pepper
dash of cayenne

no oil

Thanks for the replies so far everyone, but does anybody have any recipes that are just cucumbers and dressing? No tomatoes or anything else, just cukes.

You can dip cucumbers in just about any dressing. I often put green patte on my cucumbers and I often dip my cucumbers in this dressing:

Lay-lays tomatoe-pepper dressing:

1 tomatoe
1/2 orange or red bell pepper
1 clove garlic
pinch of salt
1 lemon squeezed
1 tsp of cayenne

Blend and slowly add in about a 1/2 cup of olive oil (add more or less as desired)

also cucumbers are great with just a little olive oil and salt and pepper as a dressing.

This is my favorite...



Thai Salad From Boutenkos
4 cucumbers
Juice of 1½ lemon
1 bunch dill
1 bunch cilantro
1 medium sized onion diced
3 teaspoons hot curry powder
1 teaspoons salt (or to taste)
3 tablespoons honey
1/3 cup olive oil
1 cup soaked sunflower seeds

Peal and slice the cucumbers into thin circles and transfer to a bowl. Next finely
chop the cilantro and dill and mix with the cucumbers. Add the onion, lemon juice, and the olive
oil. Finish by adding the rest of the ingredients and mixing well.
