Hello, I have been trying to eat cacao nibs. I can't figure out how to prepare them. They are way to bitter for me. I just want to make them yummier.
Any suggestions?

Easy! For yummy fudgey syrup, blend in food processors with raw agave to desired consistency (it will thicken as it sits). Eat with almond butter, crackers, on banana "ice cream," or by itself.

For yummy cacao shakes, blend with nuts, maca, apples, pears, bananas, etc., almond milk or water.

Cacao can have a pretty intense energy, so listen to your body, and enjoy!

I use them in making icecream, shakes, Rp's brownies. Search the old thread and you will find a ton of stuff including Rp's brownies.

I use them to make truffle-like 'sweets':

cacao nibs - ground fine in a processor
fine ground almonds
coconut butter
agave syrup.

I always guess my quantities but you need more almonds than cacao nibs.

Mix the ground cacao nibs and almonds together, sweeten as necessary with the agave syrup and add a spoonful of coconut butter as that will firm up the mixture.

Put into a square cake tin and in the fridge for a while. Once firmed up, you can cut into small squares and eat!!!

These treats don't last long in my house.

When I grind my nibs I can get them rather fine, but they clump up in my vitamix and turn into hard lumps of fine ground powder.. any idea what is causing this? Makes my stuff very grainy as I have to pound the lumps down. Very weird.
