Hello.

Does anyone know how to get almond butter to be the same consistency as the raw almond butter made by MaraNatha? When I make it with my Champion, it comes out grainy, but theirs is creamy and DEE-licious!!

Is it possibly because they don't soak?

If I soak and then dehydrate the almonds, would it be better?

Anyone have any thoughts?

One reason is theirs isn't raw. Usually special machines are used to grind the almonds, regardless of whether it's raw or not.

I'll let others tell you how to make it creamier.

I've had really great luck making a creamy almond butter using the Chamption (without the oil separating at all) using almonds that have been in the freezer. I can usually get ast least a cup or cup and a half of almond butter before the machine begins heating up the almonds and they kind of begin to crumble as the "butter" comes out of the machine. I don't continue putting almonds through right before that point ~ just take a little time and try it and you'll notice when it becomes a little powdery and you'll know when to stop. SOOOOO much more delicious homemade this way than buying your almond butter. BUT remember, the nuts have to have just been taken out of the freezer to begin processing.

GilmoreGirl- Hi. Are you saying that EVEN THOUGH it states on the jar "Creamy and RAW" that it is not raw? They ALSO make one that says "Creamy and Roasted"..so...??

Yes, I am also curious if you will get the same result if you soak them before you freeze them?

SeaGrass, it's been said that Maranatha pasteurizes their almond butter so although the one labeled 'Raw' might be made from raw almonds, it's heated for shelf-life purposes.

But I've made almond butter in the Champion before and it was nice and creamy. I got a hint from someone on this board (forgot who to give proper credit) but they said to pop the UNSOAKED almonds into the dehydrator like overnight and then process in the Champion. I tried that and it worked like a charm. I guess perhaps dehydrating them sorta simulates a low roasting or something, I don't know. It didn't have the exact same flavor I find in the Maranatha brand, but the consistency wasn't too far off the mark.

I must say I am VERY dissapointed that Maranatha isn't raw. How misleading! (Blatently!) Well, little shocks me anyway.. but still :)

So, Rawkinlocs, you're saying not to soak at all? Just dehydrate them?

Ideally you'd soak 'em, but I suppose if there is no way to get a decent almond butter this way, its better than eating dead almonds.

Anyone else use any other raw nut butter that is as DEElish as the Maranatha "raw" butta??

I think it is only heated to around 140 or so, so technically it's not cooked just not exactally raw either.

I haven't had too much success making creamy almond butter. I've made some pretty good n' creamy butters from walnuts and pecans though. :)

Im disappointed too. I bought that brand and it was pretty good. Is there an Almond Butter or other type of butter that is considered RAW?

Id really like to give Maranatha a piece of my mind! SOOOO misleading :mad:

Artisana (Premier Organics) and Rejuvenative Foods are two raw brands. Sweetwater Market makes one too, I believe.

I use almond butter from Glaser Farm. It is raw and ten times better than Maranthana. I used to use that brand until I found out it wasn't raw. Here in Florida they sell the Glaser Farm almond butter in the refridgerated section at Whole Foods, but you can also order online from them. I can eat that stuff all by itself from the jar, it is so tasty.

Love Glacier Farms ANYTHING!! Ive been to their market a few times- it is raw food heaven. SOOO... if they and these other people are making a raw almond butter and it is awesome- we have to all figure out how they do it!!

I want to make my own :)

I actually live about 18 hours away... just so happens I have been blessed to go there 3 times.

Maranatha almond butter isn't raw for two reasons:

1) Though the almonds aren't roasted, the butter gets heated during the grinding process simply because of the volume and speed at which they're producing it.

2) The canning process. With very few exceptions, things that have to be refrigerated after opening (but are NOT refrigerated before that) are packaged using hot water canning.
