I miss eating Raw Brownies since I gave up Almonds so today I had the idea to replace the nuts in my recipe with 2 cups fresh sprouted buckwheat. They are not as rich, gooey, as the ones using nuts but certainly a great replacement if you want a lower fat desert. :D
I simply replaced them in the recipe I use. I imagine it would work in other recipes too.

Hmmm
Did you give up nuts all together or just almonds?
I never had brownies with almonds just walnuts.

Yes I tried RP's brownies, very yummy, but I am sensitive to walnuts and my mouth was raw and I had blisters on my gums for TWO days from the amount of walnuts. Pecans do similar but not as bad.
So I tried them with Almonds, very good too !
Almonds are a trigger food for me. If I start eating them I then will eat them in lieu of a meal, or two or three....I can get to the end of the day and found I ate some fruit, greens...and ALMONDS !!
I have been raw a year and wanted to drop a few pounds but did not in a whole year, stayed the same. I did as Alissa said the first year, eat raw. Now I started restricting the almonds and I dropped 2 pounds in the last week.

Ahhh, okies. Gotcha. I get similar as you with pecans. Walnuts seem to be o.k. for me.

rawfigure,
do you dehydrate the sprouted buchwheat before you use it? I imagine that would give the brownie a very crunchy texture. I have granola with dehydrated sprouted buckwheat and it's absolutely amazing.

thanks for posting rawfigure. If you come up with any other substitutions or lower cal things with buckwheat, I hope you'll share them.
I can gain weight if I don't watch what I eat, even on 100% raw, so I also need to keep an eye on things like that too.

I did not dehydrate but next time I will try that. I think it will make it more nutty less moist too.
Yes share the granola recipe !

I used sprouted/dehydrated buckwheat (that I then ground into flour in my flour mill) in my onion bread once, just to see if it would give it more "body". It changed the texture of the product and I am not sure if it was for the better. It had sort of sharp, gritty particles and definitely changed the flavour. So I don't think I would use it in brownies in that form.
I might try drying out the sprouted buckwheat on a towel, just out in the air, and only to the point so that when you grind it in the FP, it wouldn't become too mushy.

Buckwheat Granola
rinse and soak your buckwheat overnight
let it sprout for a day and rinse it thouroughly (the water will be sort of slimy)
put it on mesh or teflex sheets and dehydrate until crunchy
I use this with dried fruit, some crushed nuts and coconut flakes as my cereal sub, great with any nut or seed milk.
Be careful: Rinse your sprouting buckwheat a few times that day when it's hot and humid, I had a couple of batches go bad on me :o
cheers,
mel
