Well I'm going to be doing my first raw weekend this weekend with another couple of online pals who are vegans and as it's a spur of the moment decision, I don't have a dehydrator, or food processor. I will actually get those as I intend on going more and more raw as time goes on, but does anyone have any easy recipes to get me through my first weekend, till I become more familiar with the raw lifestyle that don't involve a dehydrator or food processor? I do have a juicer that I use all the time.

FRUIT! :D

Mangoes, peaches, berries, melons, grapes, kiwis, bananas, and oh, some more berries :p

cut the kernels off a fresh cob of corn, cut up one avocado, juice of 1/2 lime, some chopped green onion or red onion, some sweet red pepper, some hot red pepper, some cilantro, some chili powder, salt, pepper, hot pepper such as poblano, ... stir.

You can make a dressing if you like, but if your avocado's nice and ripe, some of it will sort of smush into a dressing with the lime juice.

Hi... Here are some recipes... maybe some will work for you. They only need a blender and cutting board.

Smoothies are a great way to start the day... especially green smoothies.

STRAWBERRY SMOOTHIE:
1 C strawberries
2 bananas
1/2 bunch romaine lettuce
water to desired thickness
*Blend till smooth... can just cut up fruit and tear leaves so it blends easily...

MANGO SPINACH SMOOTHIE:
1 banana
1 mango
2 C spinach
2 C water
*Blend smooth.... can chop fruit and tear leaves so it blends easily...

MANGO SMOOTHIE:
2 frozen bananas
1 1/2 C frozen mango chunks
1 C orange juice
*Blend till smooth

*You can make salsa and serve with fresh veggies...
*I also cut up cabbage leaves in triangles pieces for chips...
*You can also chop up veggies and put in lettuce leaf and top w/ salsa for a veggie rollup...

FRESH SALSA:
3 tomatoes chopped
1/2 C green onions with tops, chopped
1/2 C green bell pepper chopped
2-3 Tbl cilanto minced or snipped
1 Tbl jalapeno finely chopped
1 tsp garlic minced or pressed
3 Tbl lime juice
salt to taste
*Chop ingredients and toss with lime juice and seasonings...

APPLE SALSA:
2 red apples chopped (any kind)
1/2 C green bell pepper chopped
1/2 C orange segments chopped
1/2 C onion finely chopped
1-2 Tbl jalapeno finely chopped
2 Tbl cilantro minced
1 garlic clove pressed
2 Tbl lime juice
1 Tbl raw apple cider vinegar
1/2 tsp cumin
*Whisk lime juice, vinegar, garlic and cumin in bowl... set aside. Prepare other ingredients and toss... best to let chill 2 hours and let flavors blend

MANGO SALSA:
2 mangos chopped
2/3 C red bell pepper chopped
2/3 C green bell pepper chopped
1-2 Tbl jalapeno finely chopped
salt to taste
*Toss ingredients... let chill 2-3 hours to let flavors blend

APPLE SALAD:
1 green apple, chopped
1 red apple, chopped
1 1/2 celery stalks, chopped
1 C red or green grapes, halved
2-3 Tbl walnuts, chopped
1 Tbl honey
2 Tbl tahini
*Chop all fruit and veggies... put in bowl and toss... Then, in seperate bowl whisk honey and tahini till well blended... (you can make more sauce if wanted) Toss dressing in fruit salad...

VEGETABLE SPREAD:
1 C soaked cashews
1 Tbl onion powder
Braggs (or soy sauce) to taste
1/2 C water
*Blend till smooth...
(can put in lettuce rollup with veggies or serve with raw veggies)

SPINACH GREENS SALAD:
5 C baby spinach
3 C mesclun (variety greens mixture)
1 head of green or red lettuce
handful each flat leaf parsley and dill, minced
1 zucchini shredded
2 carrots shredded
4-5 green onions chopped
1 cucumber diced
3/4 C raisins
3/4 C walnuts, chopped
*Prepare all ingredients and toss... top with carrot dressing or dressing of your choice

CARROT DRESSING:
1 C carrot juice
1/2 C olive oil
garlic clove pressed or garlic powder to taste
2-3 Tbl lemon juice
salt to taste
*Blend to liquefy... toss as much dressing as you want with salad

CUCUMBER CURRY GREENS:
1/2 bunch cilantro chopped
1/2 red onion finely chopped
large bunch or bag spinach, torn in pieces
2 cucumbers halved then sliced
1/2 C cashews chopped
DRESSING:
1/3 C honey
1/2 C olive oil
2-3 Tbl lemon juice
1-2 Tbl curry
1 tsp sea salt or to taste
dash cayenne
*Whisk dressing smooth in salad bowl... then add rest ingredients and toss

STRAWBERRY MANGO SORBET:
1 mango, cut in cubes
2 bananas, sliced
15 strawberries, halved
*Freeze all the fruit the night before... (or at least 5 hours) Then puree on high speed till smooth...

This is an easy and wondefully fresh tasting salad:

Yam and Apple Salad

1 medium small garnet yam, peeled
2 green apples, peeled and cored
1/8 - 1/4 cup raisins, chopped
1/8 - 1/4 cup walnuts, chopped
1 orange
sweetener of choice, e.g. stevia plus (optional)

Grate yam and apple using a box grater, salad shooter (best) or the large-holed grating disk in your food processor. Put in serving bowl. Add raisins, walnuts, and sweetener, and mix. Juice orange and pour over salad and toss. Yummy

These are brill. Thanks everyone. Well I started off half a day early and have my blender now.

Will be putting those tips to good use. Tried raw corn straight off the cob today and can't believe how amazing it tasted. So much more flavour and substance.

All this food looks so good!!!!!!! I'm hungry but afraid to get my FP out to make things in the dorm kitchen! People would really think I'm strange then! haha!!
