If I filled a crockpot or a rice cooker with sliced veggies and liquid, turned it on low, and left it for, oh let's say 12-24 hours, would it be a lovely raw enzyme-active soup with soft veggies, or a pot of cooked food?

depends on the highest temp reached I suppose :confused: :confused: :confused:

It would be cooked. And probably overcooked. Vegetables usually cook in about 5 hours on low.

can you check the temp of the stuff in the crockpot. If it does not get over 115 then it should be ok but I am not sure it would soften at that temp.
You may find that the same temp is required to break the bonds and soften that is required to kill the enzymes and ruine the life giving properties.

Opinion:
-If heating does nothing to improve the nutrient / vitamin / protein quality of the food - then do it because it will bring you joy! Ha! ha!
