Does anybody use agar for gelling purposes? I realize that if you need to warm it to gel, that it isn't raw, but would it be a neutral substance, not benefitting or hurting the body, or would it be a detriment?
Other than coconut oil and flax, I am having a difficult time finding something to gel a fruit pie.

psyllium husk powder works great. Get some psyllium husk, gind it until ULTRA FINE in your coffee grinder, put a small spoon or so into a pie, and it will gel up in time.
It is a bit of an art to find the right amount, too much will make the taste more bland.
