Does anyone know how I can make coconut water or what I can substitute for this in a recipe. I bought that Rawvolution Book and it calls for coconut water in many of the recipes.

I would think that you could take raw coconut (shreds) and put it in filtered water and let it soak a day or two? I'm not sure...

isn't coconut water just the water inside the coconut when you open it up?

yes, just crack a hole in a coconut and drain the water out and wahlaa!

and another yes... just crack open a coconut... but be sure it's a "young" coconut, which is white and pointy on top... not the round brown ones.

Here's one method: http://www.rawfoods.com/articles/youngcoconuts.html

Asian stores have the fresh young coconut and canned coconut "milk". I can go to the store from Phillipines, Korea, India and China and get these items.

Well I want to know how to make coconut water if I don't have access to coconuts. Can I soak dried coconut for a few hours and use the water?

Well, I think the coconut water is the water inside the coconut, so I don't think soaking the dried stuff would do it.

I just open up a brown coconut, pour out the water, use it, and eat the flesh, I think I'm gonna buy one today, been thinking about them, they are just sooooo time consuming to open, clean, scrape break apart, peel eat, etc. ugh!!
but they are sooooo good.

The problem is I don't have access to coconuts.

cdepalmer,
just use water- i've substituted plain water in several of matt's recipes, and they came out fine.

Rp I was craving coconuts sooooo bad a few weeks ago that I was eating them so much that I really got fast as cracking them, drinking them, and eating the coconut milk. YUMMY! I can now do the whole thing in less then 2 minutes. Keep on practicing raw friends!

Well, if you don't have access to young coconuts (which is what most raw recipes that say "coconut" refer to), I would just find some sort of substitute. Maybe juice some fruit and dilute it with water....? Young coconut milk is so unique that it would be hard to replicate the taste!
