i am not a huge fan of raw veggies...i will eat a salad, but am a little tired of them. my body is sensitive to sugars, even natural ones, so any suggestions of ways to get veggies down. ways that taste good...tia....Melissa

cut them in matchsticks and marinate overnight in a sauce of garlic, nama shoyu, ginger and red pepper flakes. it will soften the veggies and taste a little like a stir fry.
or get a saladacco and do the mock pasta thing, I really like zucchini with a raw marinara or raw alfredo. Beets and carrots work good too. As do sweet potatos.
also try julianos mock mashed potatoes made from cauliflower, cashews, thyme and lemon juice

thank you for respnding...i have a green smoothie everyday. my body can handle only one(with the fruit and all). i am cutting up veggies now to marinate.

if you do them now theyll be ready for dinner. And try as many variations of them as you can and alter or change the marinate.
try lemon, garlic, ginger
lime, cilantro
garlic oil, basil
its infinite
i like spicy so I use jalepenos, or crushed red pepper
i also love curry, cumin, etc

One of my favorite ways to eat veggies is to make soups in my blender. There's a lot of recipes on here if you do a search.

There are some raw dehydrated powdered veggies kicking around. www.hacres has raw BarleyMax, CarrotMax, BeetMax, and other raw stuff :) I drink about 3-4tsp of a raw powdered green mix every morning
That, and juicing ;)

Sweetgoddess posted a recipe once for veggie nuggets that are pretty darned good.
Here is the recipe as Sweetgoddess posted in another thread:
"In a food processor, blend a red pepper, a small head of cauliflower, a large stalk of broccoli, a quarter of a sweet onion, 3 carrots, 1 cup soaked almonds, 1 cup soaked sunflower seeds, 1/4 cup sesame seeds,3 cloves garlic, 2 Tbsp Braggs or namu shoyu, any herbs or spices you like, 1 tsp cumin.
Form this mixture into nugget shapes ( like chicken nuggets) and dehydrate on teflex or parchment covered trays until a little crispy. Flip after 4-5 hours.
Serve with honey-mustard dipping sauce ( blend mustard powder into raw honey) or whatever sauce your kids will eat.
They will not know they are made from veggies!"

I may not be the one to ask because I love most raw veggies just as they are. Have you tried nut cheese? I make the nacho cheese, partially dehydrate it and pack it into little hollowed out peppers or celery stalks. Also made the Swiss and put it on onion bread with lettuce and tomato. Yum, yum!
