This is a great quacamole recipe, I don't care for avocados, but my hubby loves them.
Two avocadoes, pitted and peeled
1 medium tomatoe
1/4 cup white sweet onion
1 T lemon juice
1 clove garlic
1/4 tsp Celtic Sea Salt
blap this all up in a food processor until chunky or smooth, what every your preference, he likes it chunky.
Serve immediately.
If you will be keeping it a while befor serving it, place in a bowl, put the pit int he middle fo the guack, cover with a little olive oil, to seal OUT the air, and cover with a lid, put in refridgerator.
I personally don't like avocadoes, but everyone says this is the best guack recipe they have ever tasted.

Another way to keep guac fresh is to place the plastic wrap right over the top of it to seal out the air. I do this all the time and it stays nice and green. This way you don't have to use a pit or oil.
