recipe:
New Raw Recipes
Mushroom Nut Loaf
1. 2 ½ Portabella Mushrooms
2. 1 C Walnuts
3. ½ C Carrots
4. ½ Red Bell Pepper
5. 1/8th C Parsley
6. ½ C Sun dried Tomatoes
7. 1 inch piece of Poblano Pepper
8. 1 Clove Garlic
9. ½ tsp of Cumin
10. 1 tsp Celtic Sea Salt
Grind everything in the Food Processor.
Form into a loaf about 6 in. L/ 3 in. W/ 1&/1/2 in. D
Top with Raw Ketchup, or Raw BBQ or Raw Marinara and dehydrate 9 to 12 hours at 100 degrees and serve warm.
Serves 2 to 4 depending if you can share anything this good!!!!!

When I first created this, i tasted it a various hours to find when it was best.
it was so good i took it all out and devoured it at 9 hours.

being a cooked food chef I do love creating but the lack of health benefit to others hurts me, I hope someday to teach the raw food creations that foster joy and health.

id rather put out a book with amazing ones then a book of 100 where 70 dont get made more than once.

Bill you are more than welcome you have such enthusiasm for this, my brother owns a pub back in the UK and is the chef there and he comes up with some incredible stuff too all be it cooked. The fact that you want nothing but the best for this book is incredible and no fillers that is a wonderful idea. There is nothing wrong in high standards and people just absolutely loving every creation you make. I can't wait to see more :D. Keep us posted and thank you so much for sharing.

Well this looks really good. Finally a list of ingredients I like. I have tried a few nut loafs and didn't like the ingredient list to start but try hoping I won't taste those ingredients...no such luck! Luckily our dogs eat anything!

the tesxture at 9 hours was still semi soft but not mushy, it had a great balance to all the ingredients and I used a raw marinara, but raw ketchup would rawk.
Ive mad many raw foods, especially pate's but this was the best i have ever had.
I have eaten at Julianos, its great but sometimes to salty or spicy, and I love hot but it seemed unbalanced.
I have had Elaine Love's Food, I love her stuff
I have had Chef Sprouts food, another jem.
and The Boutenkos, A+
Also Lacey Jackson also excellent
so I am inspired by them and so many I have yet to have the pleasure of tasting.
Someday I hope to be mentioned in the same sentence with their great foods and dedication to raw living.

I am having an early lunch because I couldn't wait any longer to try the meatloaf!
It is absolutely the best I've tried. I made a well down the middle of it, like the traditionalists do, and put raw ketchup in it. The only thing I would do (for my own taste) is less pablano - maybe even eliminate it.
So tasty!! I want to take this to my next potluck.

omitting the poblano probably would be great also..............
i had one so i used a piece
I have even thought about a spicy version using habanero and topping it after done with fresh salsa.

i'll definitely try this recipe. i assume you used unsoaked walnuts but that you could substitute soaked and dehydrated walnuts. i think soaked walnuts would change the texture.

I made the meatloaf, eliminating the chili pepper and adding some Italian seasoning. Then I rolled it into meatballs. After dehydrating them, I poured marinara sauce over them. So good. The best recipe for meatballs, yet.

i did the same i tested it a little from like 5 hours on, found that at 9 it was so good I ate the whole thing.
one of these days Ill make 4 and try them at 9, 10, 11, & 12 hours
may need some tatse testers for that experiment.

Wow!! This is the best loaf ever!!! I made Doe's ketchup to go on top and it is absolutely delicious. You werent kidding when you said you cant stop eating it. Everyone should try this. I added a little chili powder to it and it tastes like a barbeque meatloaf. Thanks so much Healthisraw1.

I was recently certified by Alissa Cohen who has given us this lovely forum. She also has a wonderful book and dvd out, Living On Live Foods. She is a magical person.
Now about the nibbling....I did finish it today but I started on it last night. I couldnt stop picking at it all day. It is the closest loaf to SAD Ive tried since going raw. Im usually not crazy about burgers and loafs but since I love mushrooms I decided to try this one. Once again....Wow!
I modified it a bit because my family used some ingredients and I didn't realize it. But they raved about it.
I used 3 portabellas and 3/4 c. walnuts. (All I had...) I left out the chili pepper and added some fresh herbs that I had. Basil and chives. I smothered the top with ketchup after about 9 hours and dehydrated it another 3 1/2 hours.
I took 4 large loaves and a bottle of my raw ketchup to add if they wanted it.
I took a pic and will try to upload it this week.

Healthisraw - You've got a winner with this one!! I made these as patties i/o a loaf and I ate two before they were even dehydrated. Very delicious and "meaty"-mushroomy tasting.

I did not soak the Sundried Tomatoes i thought they would help the consistancy, I ground it all until it was fine but still discernable i did not want a complete puree. When done it should have the texture of an original meatloaf.
I hope you enjoy it.
ps. I tried it with raw marinara, but ketchup or bbq would all be great
experiment, great thing about recipes is they are guidelines not laws.

My ketchup recipe:
Jans Raw Ketchup
6 ripe tomatoes, seeded
½ c. sun-dried tomatoes (opt.)
dash of agave nectar
½ t. cinnamon
½ t. cloves
1 t. allspice
1 t. garlic powder
1 t. onion powder
1 t. sea salt
Blend until smooth. If the flavor is too strong, add some seeded tomatoes until it is just right. If I dont have agave, I use stevia or dates. I prefer agave, though. Remember, the taste is stronger after dehydration.
I pour it into 9x13 pans and dehydrate it until thick. Usually 3-4 hours. If you forget about it and it is too thick, put it back in the blender with a little tomato and blend!
I always adjust the seasonings, again, after I dehydrate it.
Mel, I used ketchup on mine, Doe's recipe. It was awesome!! I also added a little chili powder to mine since it called for cumin and the two go so well together.
EPPP if you do a search for ketchup you willl find Doe has a list of recipes for many different condiments including one for ketchup.
Again I have to say this loaf is really great tasting and very similar to the real deal! Bill hurry up and write a recipe book!!!

Okay, how do I even describe how wonderful this recipe is?? Absolutely delicious!!
The only changes I made was to add some chili powder and I didn't add the Poblano Pepper or salt. I made 6 patties and for 2 of them I added some oat flakes (rolled in my mill grinder). Both versions are just way too good!
Next time I may add a bit of minced onion before I put them in the dehydrator and maybe a bit of Italian seasoning. Tomorrow I will make some ketchup and take some pictures.
Now I am not much of a raw main dish person, I eat a pretty simple diet and of course desserts! I have such trouble finding main dishes that I like and believe me I've tried plenty, but this one is certainly a favorite and will be a mainstay of my diet!

are you serious? if so i may be interested. I grew up in socal...................where are you? would it be full time? what are you willing to pay? etc.
living in LA would have to be well worth my while, cost of living is rediculous, and traffic is worse. I lived in the San Fernando Valley for all but 4 of my 46 years. I am not against going back but it would absolutely have to be a perfect situation.

My mouth is beyond watering for the "meatloaf" but more like a river needing mushrooms and walnuts. I do have almonds but may have to hit the stores tomorrow and for walnuts and musrhooms. I can't wait to add the ketchup.
I have tons of carrots so maybe I'm going to make carrot burgers in the dehydrator as well as my "pulpy" burgers tomorrow along with the loaf. May as well get everything going at the same time.
Made some dehydrated tomatoes but don't know if it's worth all the time for the small amount I use. I can buy organic sundried local at good price.
I'm hoping local stores have Alissa's book. I know I can order online.

I havent tried it but you may be able to sub sprouted beans or lentils.
Sunflower seeds, Flax seeds may work if youre not allergic to them.
taste and texture may change but overall it should still be very good.

Has anyone tried this with plain old button mushrooms? Would that change the flavor compared to portabellas, and how many would you use? I haven't seen portabellas where I am, but am dying to try this! I haven't had portabellas since eating at Olive Garden in my old SAD days long ago and don't know how the 'raw' taste compares to button mushrooms.
btw, I use finely chopped mushrooms (from the food processor) in my marinara sauce as a 'spaghetti bolognese' or meat sauce. For my finicky kids, they love it, as I call it 'spaghetti like Grandma makes!' They absolutely can't stand mushrooms when they can tell what they are, but gobble that sauce up. My hubby and I eat it on zucchini pasta, but we are still working on that with the kiddos. They have my raw sauce on whole wheat spaghetti noodles. Hopefully one day....:rolleyes:

I saw a picture of meat balls stuffed with a little cheese inside. So when you bite into it there in a center is this little white/cheesy nuget;
it should work with Alissas Meatloaf p 419 made into balls or the above recipe made into balls stuffed with:

These meatballs sound amazing!
I always put mushrooms in pasta sauce too. Sometimes I marinate them first.
My mum and I don't like zucchini spaghetti either (she's a finickity eater, its like trying to feed a child) but we both like pasta sauce with hijiki seaweed (it looks like black spaghetti) or with zucchini sliced with a vegetable peeler, to make paper-thin strips.
Sometimes I mix pasta sauce with sliced mushrooms, pine nuts and chopped cauliflower.
You could also use your pasta sauce with mushrooms to top cauliflower-mash-potato or to make lasagna, pizza or ravioli.
You could use it as the filling for a pie, or calzone, or serve it on a slice of raw bread such as mediterranean almond bread. (its under the thread better than sliced bread).

I too tweaked it a little for the things I didn't have so I didn't use red peppers, parsley or poblano but I did use jalapenos. I had 5 mushroom caps so that's what I used. It was WOnderful! I made a salsa for the top but didn't dehydrate that part at all. It's so great how the loaf actually looks like the real deal too! It was hard to stop eating! I finally forced myself to put it away though so I'd have some for today :D Thanks again Bill! Where do I sign up for a copy of your cookbook!! ;)

Just made this recipe and it is sooooooo good. Made into patties and dehydrated. Did not top with ketchup or bbq--just plain and left for about 4 1/2 hrs--just perfect.

Mine tasted sour, was it supposed to?
I didn't particularly like it which surprised me, but my mum really loved it. I served it with chopped romaine lettuce with oil/vinegar/braggs dressing.

I love this recipe! I ended up using my dehydrated patties over spinach salad with mangos and a spicy thai peanut (almond butter) dressing. Awsome. Had this almost every day for lunch this past week and could do again this week but ran out of meatloaf patties.

This recipe is amazing! I knew I had to try it when I read it. I subbed button and crimini mushrooms and used a habanero pepper. I soaked the walnuts, and homoginized them and the mushrooms together.
I thought it was delicious not dehydrated too. It would be good in salads and wraps. I made a meatloaf sandwich with it and rawkinloc's garlic bread that I will put up tomorrow. Thanks for the recipe, it's a winner in my book!

We had this yesterday with a spicy-sweet ketchupy sauce on top. It was delicious! It dehydrated for probably about 10 hours or so.
I omitted the carrots and added a little more mushroom, walnut, and sundried tomato to make up for it. I also added some smokehouse pepper.
I'll definitely be making this again. Thanks! :)

After reading this thread, I couldn't wait another day. I made these into meatballs with just a couple variations- I used pine nuts instead of the sesame seeds and all walnuts, no pecans. All I can say is wow! I have been eating them plain and can't wait to try them with a marinara or ketchup. Thanks for this recipe. It is going in my favorites!

Bumping this in time for Christmas because it's REALLY good! I lost the recipe I copied ages ago and had to do some hardcore searching for it. I see others love it enough to bump it as well, eh veganforlife?
I use this recipe as a burger, it makes kick ass burgers you can really get your teeth into. I'll be making these as part of our raw Christmas picnic lunch.

Hmm. The only thing I did different was use green peppers instead of red (all I had) but I wasn't that impressed. I wanted to be! They were okay, but not great. I wonder if I did something wrong.

It really is one of these best recipes for "meatloaf" I have tried, and with Cheries's Garlic toast/bread~~~ omg! delicious! with some kale chips too would be good.

Could you please tell me how many cups of carrots, peppers, sun dried tomatoes and teaspoons of cumin? Does anyone else see the funny 'A's instead of numbers?
Mushroom Nut Loaf
1. 2 ½ Portabella Mushrooms
2. 1 C Walnuts
3. ½ C Carrots
4. ½ Red Bell Pepper
5. 1/8th C Parsley
6. ½ C Sun dried Tomatoes
7. 1 inch piece of Poblano Pepper
8. 1 Clove Garlic
9. ½ tsp of Cumin
10. 1 tsp Celtic Sea Salt

my guess would be those are just 1/2 cup or tsp.
and i am definitely making this soon! i love neatloaf!!!!! :D

I tried this recipe and found that it tasted too much like cumin. It needed to be cut down severely or maybe even cut out.
