RECIPE UPDATED 2009


Here you go tvillemom!!!

I had made dehydrated crisps before and they came out tough and never tried again.

I was inspired this time by the processof making Maraws Kale Chips.

This time around was a complete success!!

Store Bought Crisps:

1 baking potato - I am sure any would do
water to cover
sea salt
old fashioned potato peeler
oil of choice - needed to get crispy!
Salad spinner - optional

I used my grandmothers potato peeler and peeled the potato into a bowl of generously salted water. Note that the peelings were paper thin and difficult to handle because of the thiness but THAT is key!

I soaked the peelings for about 3 hours then rinsed. Then refilled with more salt water and soaked for another 3-4 hours. Rinsed again; put into salad spinner to dry and dehydrated overnight. The longer the soaking time the better, if you shortcut on this you will not get rid of the starchy mouth feel!

Toss chips/crisps carefully in olive oil.

I added no additional salt as the salt water gave it a salty taste. For you in the UK try putting some vinegar in a spray bottle and spraying after you lay then out on the dehydrator!



As I was taking a picture my son reached up and grabbed one! They ate them out of the dehydrator before I could take them out!

I think the last time I made them, they were just too thick and they were blahh :(

Hmmm... I tried potato chips once. I put some vinegar in the water but didn't want the vingegar taste so I rinsed them very well. Mine were plenty salty but never lost that icky raw potato taste. Perhaps I didn't soak them long enough. I only soaked them for about a half an hour.

Mine are uncooking right now, I didn't soak long enough I am sure as I was in a hurry but I will soak them longer the next time because I am sure they will be even better then! I did try a few and so far so good. GREAT way to do this Erin, thank you so much!

The extra long soaking time just removed more of the starch and gave them that translucent-ness that made them melt in your mouth, Yummmmmm :D

Wow, those are super thin. Everytime I have made them I would get them to thick. I will have to also give it another try.

question from a newbie: what temp do you dehydrate on? i'm soaking the potatoes right now. i had 3 left and was wondering what i could do with them...

i'm so excited to use my dehydrator for the first time! i just picked it up today after finding one used on craigslist for a bargain of a price!!! :D

Sounds great! I've tried making sweet potato chips a few times but they (like some others) were too thick and never got really crispy, they stayed sort of chewy. I can't wait to try these, I've been craving chips for a while now...

I got my spirooli but still haven't used it. Would I be able to get thin enough slices for chips with it? Also, how do you get the paper thin ones off the mesh?! Whenever I have too-thin stuff on the mesh it doesn't come off, it just crumbles.

I have 2 sweet potatoes I need to slice & dry. I'll have to figure out what to put on them & whether to use a regular peeler or the spirooli.

:rolleyes: I just wanted to add that the lengthy soaking time is a must. I have tried to short cut it and the crisps end up with that starchy mouth feel!

I actually did the ones in the photo with my Grans potato peeler - killer on the hands; the old fashioned thin one. I have since done it with my new mandoline and actually prefer the peeler method though I am sure the Saladacco will work great.

As far as the sticking issue I did not have a problem here. I think thats because I had gotten out ALL the starch. You could lightly brush your screen with olive oil if you think it will be a problem. I also dont shortcut on the drying time. I have found with this weather - it's raining here in Seattle - I leave my dehydrated foods in it with it running most of the time to keep the dampness away.

I'm going to make this now since I have 4 trays left in the dehydrator! I've made potato chips twice and both times some taste good and others don't. I've used the spiralizer and mandoline, but not the peeler. I also have a grater that looks like it may get them pretty thin. It looks like you have a winner! Thanks for sharing!!!

I've got mine soaking now and plan to use the long soak time like Erin mentioned is so important. I didn't do that the last time I made them.

Can't wait to try these again! I think I will spray some of them with vinegar too, yum!!
