I know that all fruit can be eaten raw and maybe a few nuts, but is there a list anywhere of what vegetables can be eaten raw. Here are the ones I know can be eaten raw. Please add others to the list that I don't have on here: Thanks! :)
Salad greens (lettuces, etc.)
tomatoes
celery
cucumber
yellow squash (wasn't sure about other squash)
onions
jimica
sprouts
carrots
radishes
parsley
herbs

You should buy Alissa Cohen's book (this is her website). It will really help you get started.
A lot of it is really a taste thing. Some people like raw broccoli, I personally can't stand it. Ditto with raw potatoes and eggplant, although some people like these things raw. They certainly are edible.
Oops I forgot about broccoli and cauliflower.
I mainly don't want to eat anything that is poisonous raw.
Can her book be bought in a bookstore or only online?

The only bookstore I've seen Alissa's book in was a raw bookstore.
There's a link to Alissa's shop in the upper-left hand corner of this page. Her book (and DVD) are really, really worth it. Full of information, recipes, motivating stories, etc.

Sweet Potatoes
Any squash I believe, acorn, speghetti, butternut...
Potatoes (which I have tried...blargh)
Garlic
Shallots
Peppers (bell and the hotter ones)
Avocadoes
Corn (good with some pepper and lime...RP's version! mmm, good!)
Asparagus
Ginger
Seaweed, and sea veggies!
Eggplant
Zucchini Flower, which I have heard is good with a little lemon!
Cucumber
Fennel
Sprouted and raw black beans are poisonous.
There are more, but can't think of any!
Oh green beans, sugar snap peas, snow peas...
I know there are some leaves that are poisonous, but forgot which ones! I know it's a root veggie leaf!

Try marinating broccoli in lemon juice for a day. Takes the mustard oil taste out. I put it in a vacuum sealed jar that works in about 15 min.

I believe the rhubarb leaves are poisonous raw. You can eat the stalk raw, but it is so bitter I can't imagine how it would be good without large amounts of agave!
I would be interested if anyone has done anything with it raw...

Maybe dehydrate it and put it with strawberries...and make rubarb-strawberry pie. Mmm, I dunno. It was a good idea in my mind!

A few years back i read that potatoes can be toxic when eaten raw..
Also i heard something about not eating celery when i gets to old it may become toxic.

I'll remember that about the potatoes! I know some recipes in raw books call for it. And it's nasty stuff raw!

Opinion:
-You can eat about 99.9% of what's in your produce section raw (including all vegetables). They wouldn't sell them otherwise. Although I can't vouch for taste or palatability! Ha! ha! LISTEN to your raw palate! It won't steer you wrong!

The solanine concentration of potatoes is low unless they're old and have started turning green. Either way, most of the solanine is in and near the skin and will be removed by peeling the potatoes. Cooked potatoes are barely any better, as only deep-frying them significantly reduces the solanine content.
All members of the nightshade family contain *some* solanine, including tomatoes, peppers, and eggplant.
Tomato stems and leaves are poisonous, containing an alkaloid called Tomatine. Rhubarb leaves are also poisonous, as previously mentioned -- kidney and black beans too. I don't know of any other poisonous vegetables or veggie parts off the top of my head.

Raw potatoes are NOT toxic. That is a myth. Only the green ones are. I don't even cut off the green part and eat the rest - I just chuck the whole potato away if it's green. (Green potatoes are toxic whether cooked or rare.)
A raw potato in a veggie juice is heaven.
As far as I know, ALL veggies can be eaten raw. (People here have mentioned some beans that should not be eaten raw but beans are not vegetables.)
Leaves are more tricky... they can contain toxins (like rhubarb leaves as mentioned). When it doubt, don't eat them. There is some controversy as to celery leaves for instance (which I love). Some say they're toxic, others don't. I still don't know what to believe. I love celery leaves (I prefer them to celery which I really don't enjoy)...

I grew up on a farm and remember snacking on slices of raw potatoes. I think only the leaves are toxic, but I didn't know if things like eggplant and some exotic veggies could be eaten raw.
I was on a low carb board once and people were saying that all veggies are poisonous to your body whether cooked or not. :rolleyes:
