I find that I eat mostly kale and collards for my food. Kale in salads and collards + Alissa's mock salmon as wraps.
I use swiss chard to make green smoothies, but, the goitrogen thing is starting to worry me. I have a whole head/package of kale, sometimes two a day and 2-3 giant collard leaves.
I've been taking the PotentSea sea vegetable supplements (dulse, kombu, etc) for iodine and trying to make raw nori rolls at least once every two days. Also, I put tons of organic Dulse & Garlic granules in the mock salmon. I switched from peaches to apricots and limit spinach... I'm just worried that I'm doing something to screw up my thyroid, but, I loooooooove my kale and macadamia nut oil salads so much.
Anyone run or not run into problems with lots of goitrogenic food consumption, especially someone with pre-existing thyroid issues? I feel fine, but, I figured it's probably wiser to ask people who might have "been there done that."
Thank you!
Oops, I just thought to myself that maybe this would be a better post for the general forum... so, here's my beloved kale salad recipe :D
1/2 head of kale, hand shredded and deveined
2 handfuls of mixed greens or herb mix salad greens
2-3 sliced scallion stalks(?)
1 sliced heirloom tomato, 2 if they are smaller sized
A handfull of heirloom cherry tomatoes, sliced into halves
2-3 sliced radishes
Half an avocado sliced.
In a bowl, place all ingredients, sprinkle on a general amount of macadamia nut oil and some conservative sea salt/cayenne. Scrunch the mixture so that all the salad ingredients are mixed together (ala Rod Rotundi's kale salad recipe on G-Living)
Eat and enjoy!
If you haven't tried mac nut oil yet, combined with salt, it makes everything have an almost buttered popcorn taste. It's soooooo rich and savory and I dream about the salad and can't wait to eat it when I wake up :p
