View Full Version : Questions about Rawkinloc's Cinnamon Rolls!

Rawkinloc-

Is it correct that your recipe calls for 1 tablespoon or more of cinnamon? I used it and it was overwhelmingly cinnamon, could it be 1 teaspoon?

How much water do you usually put in when adding it by the tablespoon? What should the texture of the dough be like?

How long do you dehydrate? Recipe just says till warm.

I am new to dehydrating...just got mine! Yeah! These were great, but just wondering what mine are like compared to the real thing. Mine were a bit dry, but am I just comparing them to 'real,baked' cinnamon rolls? Or did I get the time or texture wrong?

When I rolled them, the dough stuck together fine and rolled easier for me than real dough! It did crack easily, though. Should it have been wetter?

I put mine in the dehydrator overnight (about 8 hours). I was up 2 times in the night with the kiddos and took the chance to check on them and they didn't seem done, so I let it go till morning.

Thanks for any thoughts or suggestions you have!

Yep, one TBS...but if it's too much for you, you can scale it down to a tsp. I tried it with less than that before and I could barely taste the cinnamon. I did it again with a TBS. and for ME, it was perfect, but feel free to add less next time.

Oh I can't tell you that exactly as I really don't measure, but the dough should be like a really thick batter and then...well, in another thread someone started about them, I actually added a few tips I had discovered upon making them before our WA State potluck...here's the thread: http://www.rawfoodtalk.com/forum/showthread.php?t=16616&highlight=cinnamon+rolls

But I had mentioned there to have the dough be like a really thick batter and then plop it onto parchment paper (that's what I used) and let it "rest" for about 10 minutes...maybe while making the frosting or something. I'll add the new tips to the original post with the recipe so no one will miss it.

This is good, I'm glad you are pointing some of this out so I can go back and change the posted recipe. When I initially adapted this recipe, I was going by something different to determine the dehydrator time and it was to really be only until warmed. But since making some changes and alterations, it should be overnight - about 8 hours.

Yeah, that's why I made the changes to add 1/4 c. of ground flax and that the dough, when coming out of the processor, should be like a really thick batter and left sitting out to rest because the time before last that I made them, I found them a bit dry too. Sorry I hadn't added the changes to the actual recipe thread! But try them again with the changes and let me know what you think! But at the same token, you definitely don't want to compare them with cooked cinnamon rolls as they are yeast-risen and a very different texture.

Again, that will be covered by making that slight change in the dough texture when processing. Next time I make them, I'll remember to measure exactly how much water I use...I'm just so used to eye-balling as I make stuff!

Yeah, that's about right but it really does also depend on how one likes their cinnamon rolls to be. I used to like mine more on the gooey side, so I'd dehydrate for a little less time...but the person who prefers theirs less gooey, they'd dehydrate longer.

Wow, what great answers, thank you!!

I guess I am just a little timid when it comes to 'winging it' on my dehydrator recipes. I think I need to add more water next time and I will also check out your other changes.

I know it won't be similar in texture to the real cinnamon roll, but I have no idea what to expect for dehydrated bread recipes! When I said I was "just wondering what mine are like compared to the real thing", I actually meant YOUR real thing - how you get them to come out! How I wish I were near someone like you to get hands-on experience! :)

Just 1 more question:
The filling seemed almost too sweet. I couldn't tell if it was the cinnamon or just extra sweet. (I am amazed to say that, not long ago, I would never have said something was too sweet!! I also love cinnamon, so I am surprised to think it wasn't right!) Is there a way you would suggest to make the filling thick and moist like that but tone down the sweetness...using less agave? I would guess just add water to desired consistency when reducing the agave, but would that ruin it?

Lastly to say, thanks for a wonderful recipe!! My whole family devoured them even with my not so perfect attempt! They have been a little difficult lately and I have been getting frustrated with continual refusal of new foods. This was a winner! I label my recipes with stars (up to 5)for my and my hubby's opinions and with smily faces for kids opinions, as we always differ. This is was my first recipe rated 5 stars and 5 smiles!!
