View Full Version : Dehydrate nut cheese

When you dehydrate nut cheese can someone please tell me:
1) for how long do I dehydrate
2) how long will it last days, weeks, etc
3) do I leave out on counter in a jar since it is dehydrated like a cracker or
do I keep in the refrigerator
please if I forgot to answer something please tell me. I want to dehydrate but don't know how to do the cheese thanks

I suppose it depends on the type of cheese and how you want it to be. I did the Swiss cheese for about 5 hours, then flipped it and then kept it in there for another 2 hours. Next time I might leave it in a bit longer. It seemed to soften up some as it cooled. I was worried about over drying it.

When I did the Nacho cheese, my daughter came in and stuck her fingers in it to taste it. At this point it was not in long enough to flip over, but she had messed it up pretty bad. So I just flipped it over in little pile-like chunks and left it in for another couple of hours. Then end result was more like a thick spread. I am very pleased with this texture and have been packing it into celery and chunks of bell pepper.

You do need to refrigerate the cheese. I am not sure how long it will keep for. At the rate in which mine is getting eaten, this seems not to be an issue! Someone said in a previous post that it can be frozen.

One trick I will tell you is that if you want nice slices of cheese, don't try to flip it over too soon. My Swiss came out beautifully. I have the round dehyrator with the hole in the middle. I turned over the fruit roll sheet and it just slowly dropped off into one nice big piece onto the mesh screen. After it was done, I cut it into pieces.

I still get vegan cheese and would love to make my own.

Both recipes are from Alissa's book. Not sure I'm supposed to post them.
