Cassy Uncooks Again! (sounded like a neat headline...I know, I am silly.)

I made a really great marinated greens dish, and thought I would share. I am trying to do more mineral rich foods to combat the fruit high I have been getting. (Lots to do at work, must be grounded. :) )

1 big bunch organic kale
1 medium bunch organic broccoli
1/2 sweet red pepper
1/4 medium sweet onion
1 small organic green summer squash (optional)
2 TBSP olive oil
2 TBSP Cider Vinegar
1 TBSP Braggs (optional)

Dice the onion and pepper. Chop the broccoli trees off the stem and seperate or chop into small little pieces. Slice the stems in a spiral slicer to ensure thin ness. (prevents the need for peeling the outer fiber.) FINELY mince the kale such that it looks like parsley. This will give it a greater surface area to absorb the marinade. If using the squash, shread it in a spiral slicer, or grater, but then be sure to drain it on towels to prevent the juice from affecting the slaw's consistancy.

Mix all ingredients in a large bowl. Stir stir stir so that everything is covered. You will find it needs less marinade than you thought...I read on rawfoodsupport that if you "massage" this with your hands it really takes in the flavors. Leave this to set a few hours in the fridge. Yum!

I had originally planned to make a "stir fry" in the dehydrater, but the veggies were great without the warming.

One of my favorite salads is kale salad. I have this at least once a week. However, throwing in broccoli is new to me. I will have to try that.
