My organic tomatoes are finally coming in....

:D I'm overjoyed but is it possible to make sauces out of them that i can keep in the freeze over the winter.
I know i can dry them and put them in olive oil but what else can i do to keep them to eat for the winter.

sauces, soups, -just freeze or dry or dehydrate. yummy all winter

Lucky! this year ALL of our crop has been eaten by squirrels! I think I got maybe 2 medium ones. :(
