juliebove, I know you were going to try the onion bread recipe. How did it work? You've had a lot of dehydrator recipes to go bad...I hope this one didn't!!!!!!

Wonderful! As was the nut cheese. I made Swiss and also Nacho. I formed the bread into finger sandwich sized pieces and last night had two little sandwiches with tomato, lettuce and a slice of Swiss on them. Have to be careful not to eat too much of it though because of the flax. Gives me that laxative effect if I have too much. I think I jumped the gun in flipping over the Nacho cheese and that was partly because my daughter came flying in and grabbed some right out of the dehyrator to taste it. What I have now is something too firm to be a dip but not firm enough to cut into slices. No matter, it is wonderful! I had it for breakfast this morning packed into pieces of celery and bell pepper. Odd breakfast for some, I know but I loved it! Next time I think I might put one less clove of garlic in it. And some hot peppers. But it's still delish!
I should add that when I did the bread, I kept it in there just long enough for the outside to hard enough to hold together. It's a bit soft on the inside but not as crisp as a cracker. Perfect for sandwiches. I also let the sandwiches sit at room temp. for a few minutes for the bread and cheese to warm up a bit.

YEY!! I'm sooo happy!! We both have made sucessful recipes now!! The onion bread took about 24 hours for my dehydrator and I can't stop eating it!!!! I'm going to have to make more because I'm almost out!! So glad it worked out for you!!
And is the cheese from Alissa's book? I haven't tried nut cheeses yet...but nut meats I have. Mmm.

Yes. Both cheeses are from Alissa's book. I bought more macadamias for the Nacho, thinking what I had might be spoiled since I've had them for a while, but it turns out they are fine so I will be making that again soon in the softened form as a dip. I'm thinking it might be good with some sprouted lentils in there as well.

I also just made the onion bread... my first recipe in my new Excalibur, and I LOVE it. Everyone who's tried it has also loved it.

I went to my parent's house yesterday. Had dinner there. I brought the onion bread and both nut cheeses. I stuffed some vegetables with the nacho cheese and put the Swiss cheese on the onion bread with lettuce and tomato. This was to be my dinner but I made extra in case anyone else wanted to try it. They did. They loved it! My mom doesn't even like onions and usually has a problem with eating them because they cause heartburn. Not only could she not taste the onions, but they did not cause a problem for her.

i have the bread in the dehydrator. it should be ready by morning. i don't think i have enough nuts to make cheese. maybe i can make a pate.

My 17 year old son came in and said"OMG what's the great smell?"
I told him it was onion bread and explained...he said "I gotta try that!!!"
Two days later he comes to me asking where was that bread...still fixated on the smell, he devoured it right up

I made it this weekend, it IS fabulous. I just love it. I used Vadalia onions. My house's aroma was wonderful! It delicious!!! :D

mine smells amazing too. i can't wait until they're ready. i've been sampling the dough and it's very tasty.

mine turned out well too. i wanted them extra crispy, which hasn't happened yet after a day and a half of dehydrating, but i took some to work today to have with zucchini hummus i made this morning. i noticed that the onions can became slightly bitter if you dehydrate the crackers for too long. i like that these crackers are mostly onion and light on the seeds.
