View Full Version : Raw "Canning" ? Is there such a thing?

I hope that this is not totally counter-productive to the cause-- but is there any way to "can" tomatoes - raw?
The tomatoes just keep coming and I am trying to find any way to capture the harvest.
Any other suggestions for what to do with all of them MUCH appreciated. I LOVE them, but cannot eat them that fast!

Dehydrate them. That is what I am doing right now.
I am also making sauces and freezing it for later use.

Nope, sorry, there's no such thing as raw canning. (not to my knowledge anyhow) Only heat will seal the jars and nothing but.

if you're okay with eating food that has been frozen, you could make some batches of gazpacho and salsa and freeze them.

freeze or dry. I am unsure how you would can raw food too last.

Some of the raw sites offer products (such as olives) in jars so there must be some way to do it.
You can make tomato sauce and freeze it. It should keep for some time and then you can use it on veg pasta.

What about a food saver with the jar attachment?
And tomatoes freeze well...

Fermented food kept in jars keeps for years!
Try making sauerkraut with tomatoes instead of cabbage.
You could include sweetcorn and peppers, courgette, onion, garlic, herbs such as basil
