Is there any other way to make ice cream other then frozen bananas? I freeze tons and love my ice cream but I would love to learn some more recipes. I have raw cocao that I add (oh my!!!) and I have used different berries. I would just like to see what you all have done.

Young coconut is a great base for ice cream. Just blend the water and meat, pour into shallow container, and freeze. When frozen, cut into cubes and store in ziplock. Use as a base for ice cream, adding any other ingredients desired. I use the Vita Mix, but I'm sure other machines would work just as well. I hope to be reading posts soon with everyone's tasty recipes. Ice cream is a favorite food of so very many people. Enjoy!

Joyful Mary - thanks for that tip. I haven't eaten ice cream (per se) in years! I've eaten Rice Dream and Toffuti brand, but this will be a nice treat!

Glad to help, Veganforlife. My son & I just opened three young coconuts & froze them. This time I poured each coconut (after blending) into a quart-size ziplock bag and sealed, carefully getting the air out. I figure it will be easy to peel the bag off and chunk the coconut into the blender when I'm ready for it. I then just stacked the bags up in the freezer for compact storage. Young coconut is the base for my green drinks, as well as many fruit smoothies and ice creams. That's a tasty treat, too. I'll start another thread and post my favorite recipe. I happened upon it this morning, and it was delicious!

I cut up a pineapple in sections that would fit in my juicer and froze them, put them through the juicer with the blank screen...Oh man this was so delightful and smooth :D I put that back in the freezer and had a bit leftover so I added a frozen banana to that...YUM!!!

I often use coconut meat or nuts as a base. Add dates and some honey or Kava and it is sooooo good as popscicles.

I read a recepie for icecream made from almond milk but it needed an icecream maker.
It sounded so good that I decided that I will purchase one shortly.

I used to do the pineapple thing as a kid. I used canned pineapple and my blender, adding a bit of juice as needed. Everyone loved it.

One of my friends would always have a supply of chunks of pinapple in the freezer but they were steeped in vodka and never lasted long enough to see the juicer.
To some people pinapple is a fruit and to others it is a mixer.
How the memories come flooding back.

I love the chocholate mousse and just took some out of the freezer that I had put on a stick... nope it's not happening...blech

Toni: where in Oregon are you? You can buy the mature coconuts that have the white shell-the brown shell has milky 'milk' . The water is clear and the meat you can grate or run through a 'champion' with the blank it comes out very very creamy. Consider if they are 'organic'?

Pineapple Base sounds tasty to me, too. Would be more like a sherbet unless you use nut milk with it, I would think.
I couldn't find young coconut in central FL for the longest time, either. My son found it at Wal-Mart one day and came home terribly excited. He wasn't particularly interested, but knew I'd be thrilled. They've been a staple in my diet ever since. Wish I could help with finding it in your location, but I don't have a clue. I don't see why you couldn't use mature coconut. It does have a much stronger flavor, but you could use only part of the meat blended with the coconut water or use water to replace part of the coconut milk. Running mature coconut meat through the Champion is supposed to yield the creamiest, most decadent coconut milk. I haven't tried it yet because I hate the chore of seperating the meat from the shell. I'm determined to become an expert at it, though, so will have more experience later.

I am near Salem. There are coconuts with a white shell? I have only ever seen brown ones. Goodness, the things I am learning here. :D

I use oat milk or almond milk. Rice milk isn't that good for icecream.
Then I put it in a blender with honey to taste, vanilla, and random things, and then mix in raisins and nuts. Works great in a regular icecream maker :)

I'm not a huge fan of bananas either.....I have a recipe for mint chocolate chip ice cream. I make some almond milk with lots of coconut butter and vanilla and agave nectar so it's sweet and blend it with the water and meat of two young thai coconuts until smooth. Add a couple of drops of essential peppermint oil. After it's blended, throw in a handful or two of raw cocoa nibs and put it in an ice cream maker.

I own an ice cream maker and have almond milk. What is the recipe? YUM!
I read a recepie for icecream made from almond milk but it needed an icecream maker.

VANILLA ICE CREAM
This ice cream will satisfy any ice cream lover.
4 cups water
3 Tablespoons honey or eight dates
2 cups raw almonds
½ teaspoon sea salt (optional)
Blend in a blender until smooth and strain through a milk bag. Pour the milk into an ice cream maker and stir until firm (usually 12-20 minutes).
