These are from the new book Raw In Ten, the author requested me to post this online at another raw site, so I think it is fair game. His website is www.rawinten.com.

Falafel with Pine Nut Sauce

1 Cup ground Golden Flax Seeds
1 Tablespoon Raw Organic Tahini
3 to 4 Tablespoons South River Chickpea Miso
Cup soaked Chickpeas(optional)
5 Tablespoons Olive Oil
2 Tablespoons Water
Sea Salt to taste
Kelp Granules with Cayenne Pepper
Finely Chopped Basil and Rosemary


Pine Nut “Yogurt” Sauce:

1 Cup Pine Nuts

1Cup Water

2 Tablespoons Miso
3 Tablespoons Olive Oil
Finely Chopped Dill(optional) and Rosemary

Kelp Granules with Cayenne Pepper

Sea Salt
Lemon Juice to taste(optional)

Blend the soaked chickpeas(optional and can be omitted to save time when using the South River Chickpea Miso) in the Blend-Tec Blender or a food processor then mix with all the other ingredients. In a large bowl then form falafel balls with your hands and serve with Pine Nut sauce, sunflower sprouts, chopped tomatoes and cucumber wrapped in red lettuce or chard leaves!

Variations: You can form a burger shape with this and call it a “chicken pattie” or make “nugget” shapes and serve with Barbecue Sauce! Your kids will love these Raw Nuggets and it should only take afew minutes to make! They can even help you make the shapes. For BBQ Sauce go to the Sunburger Recipe and make the Raw Ketchup then blend with some South River Azuki Bean Miso and Agave to taste.

Sounds yummy! Isn't miso cooked though? I know it's made from fermenting soybeans, but aren't the soybeans cooked first? Or is miso made from soybean sprouts?

I think the miso is considered a living food rather than a raw one. It has good health benefits (can remove radiation from your body) and is better than the Bragg's or Nama Shoyu because those can have mycotoxins and feed yeast, from what I've heard.

this just says "cup of chickpeas, soaked" is that 1 cup, 1/2 cup? which one, do you know?

I think it is one cup. If you use the chickpea miso, you don't need the chickpeas. I didn't like the rosemary and basil added tho'.
