View Full Version : Veggie Tuna (a use for left-over carrot pulp)

5 lbs carrots, peeled (I prefer to not peel mine....)
2 stalks celery
1 bell pepper
1 small red onion
1 large tomato
1/2 cup eggless mayonnaise (available in some health food stores, or it's easy to find a recipe for it.)
2 T tamari (or soy sauce)
1 T sea salt or other salt substitute
2 t kep seasoning

Juice the carrots in an electric juicer. Save the pulp, and enjoy the juice! :)
Finely chop the celery, bell pepper, onion, and tomato. Add the carrot pulp to the chopped vegetables. Kenad the eggless mayonnaise into the carrot pulp mixture. Next, knead in the tamari. Last, knead in the salt. Enjoy on lettuce, or on some raw bread! :)

Mmm, that looks good!! I might have to try this with my onion bread and a tomato!!
