View Full Version : Fresh coconut substitute

I am making a carrot cake recipe tomorrow that calls for 3oz of fresh coconut. I don't have coconut, but I have coconut butter. Anyone know how much to substitute?

Any other suggestions for good substitutions?

hmmm...good question. Sure wish I knew the answer. I am sure someone will come along with an answer. Let us know how the cake turns out.

Ah, the fresh coconut conundrum :rolleyes:

I've tried to make various puddings lately, using Tropical Traditions Coconut Creme or even avocado in lieu of coconut meat - all without success.

I'm just so unreasonably stubborn to the idea of hacking open a baby coconut. I have access to them and yet cannot seem to wrap myself around the physical act of cutting them open.

In my minds eye, it goes something like this....

*Makes first hack into coconut*
"Hey, that wasn't so bad..."
*Makes second hack into coconut, taking off half of hand*

So, no, I cannot help you there... but, as the other poster said, I'm more than keen to anyone who might have a suggestion ;) :D

coconut meat is like nuts,

coconut butter is an oil/fat

they can NOT be used as a substitute,

you can use any nut, I would use soaked almonds for the same consistancy

I would try cashews, but there is nothing like the real thing! :)

I don't hack anymore. Someone shared a way to get into them that's safer. I take a pair of scissors and poke around the bottom until I find a soft spot, the scissors make a straw-sized hole. I sip the juice out, then take the coconut outside and throw it on the ground a few times until it cracks open.

I use an old pillowcase when I whack mine on the concrete! I've had my grand-sons help me do this and they love it!
