View Full Version : Another Onion Bread Thread

Ok Guys,

I made the onion bread, and tasted it slightly and did like it, but I got sick smelling it in the dehydrator. I even had to put the dehydrator on the back porch to finsh it off. I gave it to some of my raw friends and they said it was wonderful, but the smell made me so nauseated that I can't bear the thought of making it again. Did I do something wrong or is it just me? I feel bad everyone is talking about this wonderful bread, and I can't bring myself to make it again.

I'm making Dehydrated Onion Rings now and it does the same thing to me. I have always hated the smell of cooking onions. This is a difficult thing when you grow up in a hungarian/unkranian family, they live on onions!

I found the scent strong, but not troublesome. We have used the sweet maya type when making this recipe. I think that part of the reason it isn't so bad is that we are at work during the day. But the onion scent is there. When I made the oregano carrot version, the scent was less onion-y and more like a pizza pie. Go figure.

i used the sweet mayan onions. Actually, I'm an onion lover, but for some reason this reciple didn't agree with me.

I made this the other day and used only half a sweet maya onion....and it did not smell up the house at all this time. I think less is better! ;)

You can also just use the base--of flax meal , sunflower meal , oil and pinch of sea salt...add whatever you want to it from there, doesnt have to be onions. I added cinnamon, raisins and honey..was good..then I used it for almond butter and banana sandwich base or almond butter and crushed up strawberries.

Next I am going to make it into italian by adding italian seasoning, garlic olives sundreied tomatoes etc. mmmmm

Just got my dehydrator out of storage!! Are the flax and sunflower seeds supposed to be soaked first?

No, just grind the dry flax seeds in a coffee grinder or your blender and the sunflower seeds, I've done it without soaking, but soaking them first may prove to make it more digestible but isn't necessary.

I just popped another batch of the oregano version into the dehydrator. I also added a bit of sweet red pepper, just for color really.

The batter tastes great.

Carmel, I am going to try the cinnamon verson you suggested. I think my hubby would like that...

With all of these versions, I may need someone to post a new recipe the italian sounds good. I appreciate everyone's help because I would really like some nice bread. I'm going to work on it once I get more sunflower seeds.

I couldn't stand the onion bread! Now, before you banish me from the raw island, hear me out....

It was waaaaaaay too oniony. Maybe I added too much. Maybe the onions were too strong. Maybe the look of horror on my husbands face after I accidently breathed on him after having a bite was enough to scare me off it forever.

I'll try with less onion I guess....the Italian sounds awesome!

Thanks Rawkinlocs. Can you grind wet, soaked seeds in a coffee grinder or do you have to dry them out first (like on a paper towel)?

Also, can someone recommend a way to make this bread recipe more neutral-tasting? A substitute for the onions, in other words. I'm thinking I would love to spread Alissa's curry onion dip on some bread for lunch one day, but I think the onion taste might be overwhelming.

I love the smell of the onions dehydrating, but my DH couldn't stand the smell, so I just put the dehydrator out in the garage. He's happy since he doesn't have to smell it and I'm happy because my grandson and I have it to eat.

If you like eating it, but can't handle the smell, just put the dehydrator where you won't notice the smell as much.

No, you dont' want to grind wet seeds in the grinder...what you do is, grind your dry (never been soaked) flax seeds in the coffee grinder. If you soak your sunflower seeds, they won't be ground in the coffee grinder...you'll simply put the ground flax and the drained sunflower seeds in the food processor and follow the recipe.

As for the onions and a more neutral taste...I didn't use nearly as many onions as the recipe called for. I used only one medium/large onion that I pulse chopped in the processor and then put in a bowl so I could do the seeds, etc. That was enough for me. So, I think if you just use less onions and maybe add other seasonings that you could have a bread that wouldn't overpower whatever you decide to add on it. I had some onion bread (well, crackers since I dried it out longer) and made a mock tuna last week and the crackers were the perfect compliment to the tuna and didn't overpower because I didn't use a lot of onions. To THAT particular batch, I also added bell pepper, a little zucchini...you can basically get creative and make the recipe your own.

Sweetlips took the same base of the recipe (both of the seeds) and added chopped apples instead of onions, cinnamon and other spices, etc., omitted the Bragg's/Shoyu and made herself a nice apple-spice bread (the recipe is posted in this forum somewhere). So, she took it and made it a sweet bread.

Thanks Rawkinlocs that was very helpful. I just made my first batch of flax crackers and they came out wonderful, can't wait to make this onion bread tomorrow.
