any ideas for fresh asparagus?? i picked some up yesterday and now i havent got a clue what to do with it now that i am not steaming.

After cleaning them, I make a marinade of olive oil, onion, lemon juice, garlic, a little cayenne and a little nutmeg, and leave them over night, usually I stir them or turn the container upside down a few times and the next day I sit out until reach room temp and enjoy.

I also have juiced them as well - tast fine in a mixture.

Marinated and processed with avocado and cucumbers and a few other tasty things, they make a great raw soup. I believe I got the original recipe from Shazzies year one journal.

THey young shoots taste a lot better than the fiberous mature ones.

Hi Heather,
I'm glad you posted this question. I was in search of ways to eat raw asparagus too. I just received Allissa's book, there is one recipe in there for asparagus I modified it to have portabello mushrooms along with the tomatoes and asparagus). I marinated it over night in the salad dressing I like to eat so much (posed in an earlier thread). The fact that it stays in the marinade for that long, breaks it down so that it's not so bitter and definitely a little softer. My husband, who love asparagus, really enjoyed the dish. I'll definitely be making that again. I'm wondering how well that might work for brussell sprouts? I love them and haven't seen any ideas for them raw. Hmmmm..... I may be on to something Huh?!!! :D
