View Full Version : Question regarding Alissa's Enchiladas

Hi all,

has anyone ever made Alissa's enchiladas in advance and put them in the freezer or the fridge to store them?

I would like to make them ahead and put them in the fridge and use them a couple of days later. I am just a bit concerned about the texture and everything.

That will be the first time I make them, too, so I am a bit nervous and grateful for any tipps!

What I would do is to make the wraps and the filling and keep them separately stored in the fridge and then assemble and pop into the dehydrator when you're ready to eat. I made them before and stored the leftovers in the fridge, but it tends to get kinda soggy/mushy (the wrap does from the juice of the veggie filling) so if you do it separately, that should be fine.

Now, you might have to end up taking the dehydrated wraps and putting into a large ziploc bag or between two slightly damp paper towels and warming a bit in the dehydrator BEFORE you try to fill and roll them as they might get hard from being in the fridge.
