I just saw this recipe from Storm/Jinjee's site thegardendiet, for a bok choy salad..... I'm sure there will be tons of ideas, because it's versatile. I've seen countless dips and spreads and dressings with tahini, and it's also great to make your own halvah or similar desserty things, bliss balls that kind of thing.
Feature Recipe: Storm recently made this amazingly delicious Bok Choy salad/slaw. Bok Choy, a light green crisp sweet chinese lettuce (actually a cabbage) available in most produce sections is high in Vitamin C and A and calcium.
Bok Choy Salad
Chop up and put in a bowl:
~ 4 bunches Bok Choy
~ 2 tomatos
~ 2 avocados
~ 1/2 bunch cilantro
Dressing:
~ 4 tablespoons raw tahini
~ 2 tablespoons raw honey
~ 1/8 cup apple cider vinegar
~ 4 tablespoons olive oil
~ herbs and spices (experiment with what you have available)
~ salt to taste with unrefined sea salt

raw organic tahini is one of my favorite ingredients!!! i throw spoonfuls into everything for added protein and creaminess. . . like banana ice cream (with some vanilla extract for the perfect vanilla flavor), and soups, smoothies (especially my delicious green ones!) and sauces for zucchini pasta, it's so wonderful for sustained energy and makes things the perfect texture!
have fun experimenting!

If you get Storm and Jinjee's eBooks, they make a large batch of dressing w/ tahini ~ then stuff it back in the jar. When you need it, add desired water and you're good to go. Lasts quite awhile.

I make a tahini based salad dressing that I love so much I can't wait to eat it every single night!
I just throw it all together in the blender and keep it in a glass jar in the fridge:
Tahini, olive oil, nama shoyu, a whole lime, a little bit of sherry (madeira), a fresh jalapeno, a little water, sometimes a little yacon syrup.

I use it to make salad dressings.
like with lemon, and ginger
or lemon, cilantro, jalepeno
etc.
sometimes i use a juicy tomato to thin it
also i have seen a few recipes with it in smoothies and raw soups
raw hummus is probably its most common use, with zucchini, lemon, garlic, celtic sea salt and olive oil
ENJOY IT
