View Full Version : Fennel recipe needed
I got some stuff that I think is Fennel (I get a box of organic veggies every week, never know what'll be in it!). But it looks like this stuff http://www.potomacvegetablefarms.com/images/veggies/fennel.jpg ... although when I found it in a grocery store they had it labeled "anise (fennel)"
Anyway, what can I make with this stuff? Can I eat all of it? The leaves, the stalks, the bulb?

I went to dinner in a house in Italy last year and they knew that I was raw and served me a terific plate of stuff that included my first raw fennel. I thought that it was great just sliced up in a salad. I have not found any (organic) in the stores here so have not had it since.

The picture is of fennel. Here it's sold with the leaves cut off, but I think they are edible to. You can juice it. If you have a powerful blender you can make a green smoothie with it. Or you can cut it up into bite size pieces and put it into your salad.
Here's a reciepe I like:
fennel, cut up into bite size pieces
carrot, shredded(I use eq amounts of carrot and fennel)
alittle olive oil, lemon juice and honey
enjoy, it's such fun to try new foods

do you have alissas book? the fennel salad in there is really nice. raw food real world has a fennel recipe in there too, with pink grapefruit also very nice.

Fennel makes things "taste Italian". I would use it in any dish that you were making tomatoe sauce for in a raw dehydrated "meat" loaf.
When cooked vegetarian I use to add fennel to my scrambled tofu and toany kind of TVP or meat nalog that I wanted to taste like italian sausage.
May also taste great in a raw manicotti dish
The carrot pecan burgers have fennel in them, not much but it's a use for it.
