We have an abundance of cucumbers and I need some recipes. Any suggestions?

1. Alissa's cucumber sauce recipe (in the book) is fabulous. As a sauce for falafel, or patties, or as a dip. Great stuff!

2. Also here is a Tabouli kind of recipe Storm and Jinjee www.gardendiet.com sent out the other day. Substitute the cukes for the coconut (truthfully, I would anyway)

Herb Salad

one bunch cilantro
two bunch parsley
one red onion
three tomatoes
two avocado
one young coconuts
4 habañero peppers
one cup of raw almonds
cold-pressed olive oil
unrefined sea salt
raw honey
half a lemon

Chop up cilantro, parsley, 1/2 the onion, avocados and tomatoes in a bowl. Add the meat of a young coconut, chopped up. Blend almonds to a fine flour in blender. Add to the bowl of herb salad. Add the juice of half a lemon, a tablespoon of olive oil, a tablespoon of honey, and a salt to taste. Chop up jabañeros and soak in olive oil for a few minutes. Add 1/4 teaspoon of the jabañeros to the bowl of herb salad. Mix well and serve. Change it up each time by adding a different vegetable/herb like corn, broccoli, or fresh basil, or a different spice like Italian or Mexican seasonings. Serves 3.

3.And thirdly, just a plain cuke salad. Slice them, and thinly slice a little white onion, and toss with olive oil, apple cider vinegar, [pressed garlic, a little agave or honey, and the herb of your choice. I love fresh basil or oregano.

I will be having tons of cucumbers from my garden in about a week. I plan on drinking plenty of juiced cucumbers.

I was also going to suggest juicing them! I put one cucumber in my green drink that I have almost every day. They are soooo good for us!

I love them in a summer salad with corn, tomato and avocado. I toss with a bit of celtic sea salt and a bit of olive oil, and then serve on top of lettuce.

You can cut them into chunks and freeze them. Use tham in green smoothies when there are no fresh ones left. I have bought some and put them in the freezer for this. I want my silica when the cukes are gone.

I have a cucumber craving at the moment and I love cucumbers either as is with some cumin, as a juice with celery or as a salad with lots of red onions and some chopped tomatoes. So incredibly refreshing.

I think it's because of the heat here that I crave so many cukes.

There really is a lot of great ideas here, great thread! :) I got a little cucumber from a co-workers garden, it looks good, but I don't think it's going to satisfy 2 adults and a 4-yr-old. Going to have to get more now. :)

I really should have done a garden this year. :( Oh well, more motivation for next year. I think I will make sure that a space gets cut out in the backyard before the fall so that it will be ready for me to get working at it as soon as the snow melts in the spring. :)

Here is my Tomato Cucumber Salad recipe:

3 minced garlic cloves
1/4 c. olive oil
2 t. salt

Mix together in a small bowl. I use a mortar & pestle and then put it in a larger bowl.

Add:

6 tomatoes, large chunks (not small or diced)
4 cucumbers, peeled and cubed
1 sweet onion, cut in half, then quartered

Mix together. Marinate for an hour and then adjust the garlic, oil or salt to your taste.

Oh my - I am so jealous-I am addicted to cucumbers-I can eat them alone and I can eat several pounds of them a day.

This is my favorite!

Thai Salad From Boutenkos
4 cucumbers
Juice of 1½ lemon
1 bunch dill
1 bunch cilantro
1 medium sized onion diced
3 teaspoons hot curry powder
1 teaspoons salt (or to taste)
3 tablespoons honey
1/3 cup olive oil
1 cup soaked sunflower seeds

Peal and slice the cucumbers into thin circles and transfer to a bowl. Next finely
chop the cilantro and dill and mix with the cucumbers. Add the onion, lemon juice, and the olive
oil. Finish by adding the rest of the ingredients and mixing well.

cucumbers
apple cider vinegar
dill
onions

OR

peel a cuc real thin and wrap around jilianned carrot, avacado and cucumber like a susji roll.

OR

cut 1 inch circles or cuc's
use a melon baller and hollow out a hole in the center
fill with your fav dip or spread
