IÂ’m trying to make candied walnuts with maple and agave but I have been dehydrating them forever and they are still sticky. I know it can be done since I bought some with maple and they were not sticky.

There could be a few things:
1. Were the ones you bought dehydrated or baked?
2. Did the ones you bought have maple AND agave or just maple? It could be the agave.
3. Sometimes when things are fresh out of the dehydrator they are one way, but once they are allowed to "cool" and sit out for a bit, they may become what you want them to. I have grawnola in the dehydrator now and it's soft, but once it sits out for a bit, it gets crunchy.
How long have they been dehydrating? Some things just take a looooong time...perhaps you can even turn the temp up if it's not already on the higher side of the "safe" zone.

I think you need to use a different sweetener, have you tried to let them sit after you take them out of the dehydrator? I know that fruit roll ups get crispy once they are no longer warm.
Also, they may need to dehydrate for a day or more.
just a thought.
