made this for dinner last night. low-fat, very simple, very tasty!

Zucchini Pasta with Marinara
peel zucchini squash with a vegetable peeler, resulting in shapes similar to fettucine. or process the squash through a spiralizer for different pasta varieties.
in a food processor, blend half of a red or yellow bell pepper with three medium tomatoes. pour marinara over zucchini. slice thin rounds of chiogga beets and cut into matchsticks for garnish.

it tastes as good as it looks! i haven't tried Alissa's -- though her book is on the way to our house as i type this. i don't really eat salt or spices at this point in my journey, so to me the naturally occuring sodium and flavors in the veggies taste wonderful. one tip is to make the pasta first, and let it sit while you prepare the rest of the ingredients, so that it releases some of its moisture and brings the texture more toward "real" pasta. you could also do this by placing the noodles on a paper towel and lightly pressing the excess water out.

they are very cool aren't they? i love chiogga beets. i picked those a couple of weeks ago while i was working out at my friends' farm southeast of Lincoln, NE. here is their website: http://www.shadowbrk.com
i made up the sauce based on what we had in the house. if you blend the bell peppers and then add tomatoes after that, you can control how watery or chunky you like it.
