Does anyone know how to make dessert crusts like those at Cafe Gratitude? They are kickin'!

I've heard they have awesome desserts. I contacted them and they said that they are coming out with a book in the next few months. So we'll have to wait until then....

Most of there pie crusts are unsoaked nuts with some date paste and a bit of vanilla and salt, processed in a food processor. ;)

I think I am most interested in the Coconut Cream Pie and Key Lime Pie crusts.
Do you know why they don't soak the nuts?
